Before living in Toronto, Sarah Jane had worked on an organic farm in Guelph, which had a big magical barn she liked to spend time in. SJ later moved to Toronto and met Leila at a yoga teacher training where they almost instantly became best friends. Together their dream was to plan a retreat where people could disengage from the day-to-day and focus in on themselves, their surroundings, and make

meaningful connections to others. They told their dream to their tech pal Nick, and he helped turn it into reality. On Saturday July 8th, they will be hosting the day and a half retreat at Zocalo Organics Farm. Imagine a day of outdoor strolls to the swimming pond, learning to reconnect with real foods, and farm from the very people who put produce on our tables. The delicious meals we eat will be from what we pick or from very nearby. We will also be connecting to our bodies and minds by doing active, restorative, sunset, and sunrise yoga. There will be a nutritionist giving us helpful tips, bartenders sampling tequila (whoot!?), and a ukelele guide for anyone who wants to learn. Bring your tent and cross your fingers that the fireflies will light up the evening. Meet good people around the campfire at night and share coffee with them in the morning. Skip to 2020, retreat was a success, Sarah Jane now lives in Abu Dhabi, and Leila in Toronto, but still we want the same. Reconnection, to the magical, to the real, to the silly. Affirmation for today- Abundance is my natural state of being.
Find a quiet space, close your eyes, and start to connect to you breath. Repeat today’s affirmation in your head a few times then start to build your abundant life underneath your eyelids. Feel the wonderful emotions you want to feel, create & manifest your natural state of being. Abundance ❤️

Chocolate chip Cookies- refined sugar free

What you need:

1 cup oat flour - (i just blend whole oats)
1/2 cup whole oats
1/4 cup cocoa powder
1 and 1/2 teaspoons baking powder
1 and 1/2 teaspoons cinnamon
1/2 teaspoon salt
4 tablespoons butter/coconut oil or ghee, melted ( used ghee)
1 teaspoon vanilla
1 large egg
1/2 cup honey
about 1/2 to 3/4 cup dark chocolate chips.

How:

Preheat oven to 325 degrees F.

1.Line a large baking sheet with parchment paper
2. Pull out 2 medium bowls, one for dry ingredients, one for wet.In one bowl, whisk together the oats, flour, baking powder, cinnamon, cocoa, and salt.
3. Melt the Ghee in the other bowl. You don't have to melt it all the way, if there are a couple lumps it's okay.Whisk in the vanilla, then the egg. Whisk in the honey.
4. Add the wet ingredients to the dry ingredients and use a wooden spoon to stir until it has just come together (don't overdo it).
5. then fold Chocolate chips into the dough.
6. Refrigerate the dough for about 30 minutes, or freeze for about 15 minutes.Use your hands to shape the dough into roughly 15 cookies
7. Place on the prepared baking sheet Bake in the preheated oven for about 12-13 minutes, or until they have just started to brown on the edges.
8. Once you remove them from the oven.Let cool on the pan for a few minutes before removing to a cooling rack.

We had coconut veg curry with basmati rice the night before. So used my left over coconut milk & rice to make this delicious plant based rice pudding.

Ingredients:

1 can coconut milk
12 cardamom pods
1/2 tsp cinnamon
1/4 tsp vanilla extract
2 tbsp date paste (I softened 5 dates in hot water & blended with some of the milk)
1 1/2 cups cooked rice (I used basmati rice)

How to:

Place the coconut milk and cardamom pods in a small pot on medium-high heat.
Let bubble for one minute, then reduce heat to low and let simmer for 10 minutes to infuse the coconut milk with the cardamom.Using a spoon, remove the cardamom pods.

Add the cinnamon, vanilla extract and date paste and stir until combined.

Next, add the rice and let simmer on medium-low heat for 10 minutes until the rice becomes nice and creamy.

We topped ours with fresh mango and it was awesome, You can also top with fresh berries, shredded coconut or any other toppings you like.
I love not wasting food so this recipe/dish for me tasted even better as I didn’t throw away left overs. ❤️

Veggie Tacos

So simple!
If you are gluten free or avoiding gluten then any hard shell corn tacos are perfect for you. Please check the ingredient list of your brand.
Veg Mix ingredients
-tin of mixed beans
-tin of chopped tomatoes
-1 red pepper
-1 onion
-2 cloves garlic
-2 fresh red chilli
-coriander
-salt & pepper

Veg Mix Method:
Fry onion, chilli & garlic sweat it out. Salt, pepper, mix beans add to the mix, and cook off and a tin to tomatoes, bring to a simmer, add thin slices of pepper and add cook for 5 mins leaving the pepper al dente. Then with back of a fork, mash the beans to a consistency you like. Take off the heat add fresh coriander.

Then add you fav toppings, you don’t have to go crazy less can be more. We went for fresh homemade guacamole and chopped coz lettuce for crunch.

Roasted eggplant & tomato Lentil

What you need:

1 cup lentils
4 eggplants
Cherry Tomatoes
Spring onions
1 Small fresh red chilli
1 Garlic clove
1 lemon or lime
Fresh Herbs- I had coriander & mint
Any Plain yogurt

How Too:
Cook the lentils, while you roast the eggplants (prick,oil& season), roast them whole. when they are nearly done thrown in your cherry tomatoes.

In a small bowl slice garlic, chilli, spring onions and squeeze a lime/lemon over them in a bowl let this marinade while you wait. Finely chop, mint and coriander and leave to the side

Once the lentils are cooked and the eggplants are done, scoop the inside of the eggplants into the lentils, and mix the small bowl of chilli lemon garlic etc in.

Serve the lentil mix up, add tomatoes on & herbs on top, and with little yogurt.

Chia Pudding

This is an awesome breakfast or snack, that keeps so you can make a biggish batch and eat over two days.

In the mix:
1 cup Chia seeds
1/2 cup Oats
Cinnamon lots
2 parts almond milk
1 part water
Diced apple

On Top:
Nuts
Seeds
Fruit
Berries
Peanut butter
Cocoa nibs
Anything goes really!

Method:
1 part chia to 3 parts liquid
If you want creamy, ditch the water add more milk. Mix all ingredients up, stir straight away to avoid chia clumps. Don’t worry if it looks runny the chi is going to soak it all up.

Place in the fridge over night or for two hours. I am a two hour person, not so organised. Once firm go wild on the toppings the list is endless.
