I am diabetic and was diagnosed with stage 3b kidney disease 6 months ago. I am also vegetarian.
I started using plant milk and butter and yogurt and other dairy substitutes. I still eat cheese though. I eat KETO brand white bread and hot dogs and hamburger buns and English muffins they are soft and delicious. I bake with monk fruit sweetener. Gave up bananas and citrus and tomatoes and avacodos and other high potassium foods. I leach potatoes when I use them which isn’t often. I eat way more live foods than ever before. I read the labels and choose lowest carb potassium, calories, fat and sodium. I got rid of All the food that I had that wasn’t good for me and stocked up on foods that are safe for me to eat. Lots of trial and error to figure out what tastes good. I found out snacks that are safe for me so I don’t feel like I am deprived of anything. Keto chips help. Keto tortillas, pancake batters, gluten free croutons etc. I google the heck out of everything. I now only use low or no sodium spices and sauces. I got keto honey substitute that even comes in a little honey bear bottle . I use monk fruit syrup on pancakes and as a flavoring and sweetener. I only eat whatever a serving is. I don’t eat past 5pm if possible and intermittent fast for 16 hours which isn’t that big of a deal because I mean I’m asleep a lot of that time. I drink 2 and half quarts of water a day.
I have lost 45 pounds since February my blood sugar is always good and I went from stage 3b to 3A. I am pretty strict with my dietary changes but I feel free and food is still delicious.
I feel so much better mentally, physically, and emotionally. I feel safe.

I went to get my labs done. I have a dr appointment on the 18th. My A1C has gone down and my potassium and EFGR have gone down. All of my labs have improved.
I went from stage 3b to 3A kidney disease.
Yay me!
Learning to live healthy actually works.

I’m having a hard time controlling my blood sugar. I dont eat crazy at all. Tonight after I tucked the kids in I did 15 minutes on the recumbent bike and 10 minutes on the treadmill. Maybe that will help.
I am still loosing weight. I have noticed that when I am stressed out, in pain or can’t sleep at night that’s when my sugar is up the next morning.

I got diagnosed with stage 3 kidney disease. I have diabetes, liver disease high blood pressure and fibromyalgia. I had bulemia as a child and young adult and I have always had kind of an unhealthy relationship with food. I do know that I steer more towards plant based and that in and of itself is an adventure.
I am 57 years old. I love my sweet little life but it isnt an easy one. Now that I have the kidney disease diagnosis along with all the other issues I know that I simply must figure out what is the absolutely best food plan that will work for me, make my pallet happy, and not make me feel like I have to do without. I am have always been a home cook and a foodie. I also dont want to give up my joy in the kitchen.
I’m sure lots of folks will have all sorts of contradictory thoughts and feelings about what I’m trying to achieve but this is my journey and they are my mistakes to make. If anyone has any gentle input I would welcome it. I’m certainly willing to consider many possibilities. I may pop on here ever so often share things that I think are interesting or noteworthy. Let me know how yall are and what you have going on.
