Simple keto Chap Chae

Soak one pack of kelp noodles in warm water with 1 tbsp baking soda and 2 tbsp lemon juice for 15 minutes, then rinse and drain well. Mix a sauce of 1/4 cup soy sauce, 2 tsp monk fruit sweetener, 1/2 tsp minced garlic, 1½ tbsp sesame oil, 1/2 tsp salt, and 1/2 tsp black pepper. In a pan, heat 3 tbsp oil and stir-fry sliced onion, green onions, sliced shiitake mushrooms, and a handful of fresh spinach until tender. Add optional sliced beef, chicken, or pork and cook through. Toss in the noodles and sauce, stir-fry for a few minutes until evenly coated, and serve warm or at room temperature with a drizzle of sesame oil.

Ingredients:
• 1 tbsp oil
• 2 garlic cloves, chopped
• 1 cup chopped kimchi + ¼ cup kimchi juice
• 1 tbsp gochujang
• 3 cups cooked rice
• 1 tsp sesame oil
• Optional: mushrooms, egg, green onion, sesame seeds

Instructions:
1. Heat oil, sauté garlic and kimchi for 2–3 minutes.
2. Add gochujang and kimchi juice, stir well.
3. Add rice, mix until evenly coated.
4. Drizzle sesame oil, stir-fry 1 more minute.
5. Top with fried egg, green onion, and sesame seeds.

Easy Prime Rib - perfect every time

1. Bring to Room Temperature
Remove the roast from the refrigerator and let it sit on the kitchen counter for 6–7 hours, or until it reaches room temperature. This step is crucial for even cooking.
2. Preheat Oven
Preheat your oven to 500°F (no convection).
3. Calculate Roasting Time
Multiply the exact weight of the roast (in pounds) by 5 minutes per pound.
Example: For a 10.5 lb roast → 10.5 × 5 = 52.5, round up to 53 minutes.
Always round up to the nearest whole minute.
4. Roast
Place the roast in the oven and cook for the time you calculated above at 500°F. Do not open the oven during this time.
5. Let It Sit (Do Not Open Oven!)
After the roasting time is done, turn off the oven and do not open the door for 2 hours. The roast will continue to cook gently and evenly in the residual heat.
6. Serve
After 2 hours, remove the roast from the oven, slice, and serve.

Super Simple Kedgeree (One Pan)

Ingredients
• 1 tbsp butter or oil
• 1 small onion, chopped
• 1 tsp curry powder
• 1 cup basmati rice
• 2 cups water
• 1 cooked smoked fish fillet (like mackerel or salmon), flaked
• 2 hard-boiled eggs, peeled and chopped
• Salt and pepper

Melt butter in a pan and cook the chopped onion until soft, then stir in curry powder for a minute. Add the rice and water, bring to a boil, then cover and simmer on low for 15 minutes until the rice is cooked. Stir in the flaked smoked fish, then add the chopped hard-boiled eggs. Serves: 6 | Time: 1 hour

Ingredients
• 1 tbsp olive oil (plus 1 tbsp for finishing)
• 4 oz fresh chorizo, casings removed
• 1 small onion, thinly sliced
• 1 garlic clove, thinly sliced
• 1/2 cup canned diced tomatoes
• 1 cup arborio rice
• Pinch of saffron threads, soaked in 2 tbsp
water
• 1 1/2 cups water or chicken broth
• Salt and black pepper to taste
• 1 lb large shrimp, peeled and deveined
• 1/2–1 lb mixed seafood (mussels, clams,
or scallops)
• 2 tbsp white wine or lemon juice
• 2 tbsp chopped parsley
• 1 scallion, thinly sliced

Instruction:

In a large skillet, cook the chorizo in olive oil until browned, then add onion, garlic, and tomatoes and cook until soft; stir in rice, saffron water, and broth, season with salt and pepper, bring to a boil, reduce heat, cover and simmer for 15 minutes, then place the shrimp and mixed seafood on top, drizzle with wine or lemon juice if using, cover and cook for 10 more minutes until seafood is done and rice is tender, rest uncovered for 5 minutes, then garnish with parsley and scallion and drizzle with remaining olive oil before serving.

Prawn Noodle Soup Recipe

Ingredients

Stock:
• Shrimp heads/shells (1 bag)
• Water (15 cups, reduce to ~12 cups)
• Rock sugar (2-3 pieces, to taste)
• Pork ribs (1.5 lbs, cut)
• Salt (to taste)

Chili Paste:
• Dried red chilies (30, soaked and seeded)
• Shallots (10)
• Garlic cloves (5)
• Water (2 tbsp)
• Cooking oil (6 tbsp)

Noodle of your choice

Toppings:
• fishball, squid, bean sprouts, spinach
• Shrimp (½ lb, cooked and halved)
• Hard-boiled eggs
• Fried shallots (store-bought)

Instructions
1. Chili Paste: Blend chilies, shallots, garlic, and water. Stir-fry with oil for 5 minutes. Set aside.
2. Shrimp Stock: Boil shrimp heads/shells in water for 2 hours. Strain and discard solids.
3. Soup Base: Add pork ribs, chili paste, rock sugar, and salt. Simmer for 1–1.5 hours.
4. Toppings Prep: Cook shrimp, veggies, fishball, squid, and eggs
5. Assemble: In a bowl, add noodles, vegetables, and soup. Toppings and fried shallots. Serve hot.
