Simple keto Chap Chae
Soak one pack of kelp noodles in warm water with 1 tbsp baking soda and 2 tbsp lemon juice for 15 minutes, then rinse and drain well. Mix a sauce of 1/4 cup soy sauce, 2 tsp monk fruit sweetener, 1/2 tsp minced garlic, 1½ tbsp sesame oil, 1/2 tsp salt, and 1/2 tsp black pepper. In a pan, heat 3 tbsp oil and stir-fry sliced onion, green onions, sliced shiitake mushrooms, and a handful of fresh spinach until tender. Add optional sliced beef, chicken, or pork and cook through. Toss in the noodles and sauce, stir-fry for a few minutes until evenly coated, and serve warm or at room temperature with a drizzle of sesame oil.
