Banana bread breakfast cookies
1/2 cup oats
1/3 cup oat flour
1/2 tsp baking soda
1 1/2 tsp cinnamon
1/4 tsp salt
1/4 cup flax seed ground
2 tbsp chia seeds
1/2 cup chopped nuts or sunflower seeds
1 cup ripe mashed bananas
1 egg
1/2 tsp vanilla
1 tbsp maple syrup or honey
1/3 cup chocolate chips, raisins or cranberries
Combine dry ingredients. Add wet ingredients then chocolate or fruit. Drop by tbsp onto parchment paper lined cookie sheet. Bake at 375 for 9-11 mins.
Great for on the go breakfast or snacks.
