Beets. I’ll admit, I wasn’t a fan of them, especially growing up as a kid. Now; finding fun and delicious ways to prepare this nutrient dense functional food, I can appreciate them. Lets take a look at the health benefits of eating this colorful root from the chenopod family.
• Beets are a unique source of phytonutrients called betalains which have shown to provide antioxidant, anti-inflammatory, and detoxification support.
• Beets are an excellent source of dietary fiber.
• Improve athletic performance: nitrate rich beets can increase oxygen utilization and muscular contraction.
•Increase nitric oxide: Beets contain nitrates which are a precursor of nitric oxide. Nitric oxide helps our blood vessels dilate appropriately, improving vascular function in conditions such as heart disease, high blood pressure, and erectile dysfunction.
Improve detoxification: Regular consumption of beets which contain betaine and polyphenols can enhance the liver’s ability to produce glutathione and superoxide dismutase, both key factors in daily detoxification.

Try this delicious creation for a quick and easy meal. No crazy ingredients, all came from Trader Joe's-Olympia,WA
-nan bread
-chicken sausage
-sharp white Chedder cheese
-sweet onion
-red and yellow peppers
-sweet and spicy mustard
-balsamic vinegar

Sauté onions and peppers lightly in coconut oil, add 1/4 cup balsamic vinegar. Cook sausage, then thinly slice. Add thinly sliced chedder on nan bread and broil till melted, add desired amount of sweet and spicy mustard. Add thin slices of sausage and onion/peppers and enjoy the flavor explosions! 😋💥

The current media debate about the benefits (or lack of harm) of high fructose corn syrup (HFCS) in our diet misses the obvious. The average American increased their consumption of HFCS (mostly from sugar sweetened drinks and processed food) from zero to over 60 pounds per person per year.

Boing molten copper at 1085c doesn't even phase the Big Mac! Think about this next time you crave this addictive junk. A properly functioning digestive system wouldn't know what to do with this, let alone the average persons, or childs. The fact is, when we eat processed foods, it's not food, we will never know what's in it.. Fire retardant anyone? Take care of your gut, it will take care of you!

Just bottled up 11/2 gallons of beef bone broth to get me through my tonsilectomy. Of all the healing, nutrient dense foods, this is one of my favorites. Its easy to make, tastes good and is key for gut healing if you have digestive issues. Be sure to purchase quality bones (local, grassfed, pastured) this batch came from colvin farms in Tenino.
