Here is a tip to separate those good leaves from the not so good leaves.

1. Trim leaves.
2. Dunk them in a bowl of cold water in the sink.
3. Dunk, separate and tear wilted dark spots.
4. Use a colander to harvest the delicious delicate greens foe your recipe!

Mmm Mmm Meatballs
Makes 3 servings
••••••
Ingredients:
••1 1/2 lbs 98% lean ground beef or turkey * (3 Leanest)
••1/4 cup fresh chopped basil leaves (1/2 Condiment)
••2.5 TBSP fresh grated Parmesan (1 1/2Condiments)
••1 tsp baking soda (2 condiment)
••2 tbsp fresh parsley (1/2 Condiment)
••1 tsp garlic powder (2 Condiment)
••1/4 tsp fresh black ground pepper (1/2 Condiment)
••1/2 tsp salt (2 Condiments)
••2 TBSP Olive Oil (6 healthy fats)

Directions:
••Preheat pan over low/medium heat with olive oil.
••Combine meat, cheese and spices together by hand. Pinch and loosely roll 1 TBSP size meatballs. (I made about 33 mini two-bite meatballs.)
•• Cook meatballs in pan for about 20 minutes or until meatballs reach 160 internal temp. (Tip- don’t over agitate meatballs. Use tongs to flip as meatballs brown on sides to keep from getting gray steamed meatballs.)
