Sourdough Pikelets //

This is a favourite breakfast at our place and a great way to use up excess sourdough starter. (If you're familiar with sourdough crumpets, this is the same but I fry them on both sides.)

1 cup sourdough starter
pinch of salt
1 tsp maple syrup
1/2 tsp baking soda

Mix all the ingredients together. Heat a saucepan on medium heat and fry spoonfuls at a time alongside a pat of butter. Cook for 2-3 minutes on one side before flipping and cooking 2-3 minutes on the other side.

These are light as air and excellent served with berry chia jam!

Berry and Beetroot Smoothie Bowl: 1 cup frozen raspberries + 1 small frozen banana + 2 slices cooked beetroot + 3 tbs. almond milk. Blitz ingredients in a food processor until smooth and 'soft serve' like in consistency. Pour into a bowl and top with 1 tbs. shredded coconut + 1 tsp. chia seeds + 1 tbs. crushed & roasted almonds.
