LSU AgCenter Nutrition and Community Health Extension Agent, Justine Ramsey, recently led a food demonstration for WIC participants at the Beauregard Parish Health Unit. Four parents and three children attended the session, where Justine showcased how to make pumpkin pancakes, a seasonal favorite packed with nutrition.

Participants learned about the power of pumpkin and its many health benefits, including fiber as well as vitamins that support a strong immune system, especially important during cold and flu season. Everyone enjoyed the pancakes and left with a recipe they can easily make at home: https://www.myplate.gov/recipes/perfect-pumpkin-pancakes.

Through a post-demo survey, all participants agreed that the session provided access to quality nutrition and wellness services. They also shared that they gained practical skills they plan to incorporate into their daily routines to support a healthier lifestyle.
