Happy Tuesday everyone!

We have some great news! We are relaunching our non slip silicone cutting board as our first US manufactured product! We are launching a preorder campaign in a few weeks but what are the benefits of going with a US based manufacturer?

Happy Wednesday everyone! I am happy to announce that the Fresh Menu Kitchen website is live! Click the link in the bio to check it out!

If you've ever had to cut a few onions at a time it can be a real nightmare!

As a chef I've cut so many onions and sometimes the pain of those onion fumes was just too much!

Hope everyone is having a great Thursday!
One of my favorite things to eat is a breakfast power bowl. Whether it be yogurt based, cottage cheese, or a dairy free yogurt, it's really easy to customize it. 🤓
This may be a good option for you if you're on a low oxalate diet! 💪
This will be one of the breakfast options on my low oxalate meal plan program coming at you this Friday!
Here is a fun little list of things you can include in your breakfast power bowl!
Strawberries
Blueberries
Blackberries
Sliced banana (half a banana is just fine!)
Diced stone fruit (peaches, nectarines)
Apples
Pumpkin seeds
Sunflower seeds
Quick oats
Raw honey
Maple syrup

New recipe on the blog!

These coconut cranberry and white chocolate muffins turned out so well. These muffins are on my low oxalate meal plan program but I just had to share the recipe here. They were so easy to make and almost taste like having dessert for breakfast!

Happy Monday everyone!

I took the last few days off social media but I'm back with this simple low oxalate recipe that's in my new meal plan that just dropped last week! 🤓
This chicken scaloppini with roasted Brussel sprouts is so easy to make. The sauce is a simple reduction of maple syrup and grainy mustard! 💪
Ingredients - serves 2

250 grams chicken breast,
2 cups of halved Brussels sprouts
2 tsp garlic powder
2.5 Tbsp grainy Dijon mustard
2 Tbsp maple syrup
2 Tbsp olive oil
salt and pepper to taste

Method

Thinly slice the chicken breast horizontally to make nice thin scallopine pieces.
Add the Brussels sprouts to a pan with 1 tsp of garlic powder and 1 Tbsp of olive oil. Saute for 3-4 minutes. Season with salt and pepper.
Add 1 Tbsp of water to the pan and cover to let steam for 1-2 minutes. Keep warm
Using another pan, heat up the rest of the olive oil until nice and hot.
Season the chicken with salt, pepper and garlice powder and Cook for 2-3 minutes on both sides until the chicken is nice and cooked.
Plate the Brussels sprouts and chicken. Using the chicken pan, add in the syrup and mustard and reduce for 10-15 seconds. Cover the chicken and serve.

This ginger chicken stirfry was the first recipe I created when I had found out that Heather was suffering from kidney stones and had to be out on a low oxalate diet. It has a soy free stirfry sauce, moist chicken breast, and lots of fresh veggies! 🍄🥦🧅

I want as many people as possible to try out my plan and see the added benefits of eating meals that are mindful of oxalates and full of healthy fruits, veggies and tasty protein! ☺️
I currently have 7 weeks worth of meal plans up in the members area ( #8 coming at you this Friday!) And I want you to choose one to try out. You could just go with week #1 that I have pictured, or send me a DM and I can send one to you. 💪
