Bean Fu Cubes (with Yellow Lentils)
Ingredients:
For the Bean Fu (Lentil Tofu):
1 cup yellow split lentils (soaked for at least 3 hours or overnight)
2 cups water
½ tsp salt
2 tbsp olive oil (for frying)
For the Dipping Sauce:
1 tbsp sesame oil
1 tbsp fish sauce
1 tbsp soy sauce (or tamari for gluten-free)
1 tbsp lemon juice (or lime juice)
¼ tsp ground turmeric
1 tsp freshly grated ginger
Instructions:
Step 1: Make the Bean Fu
Soak the lentils for at least 3 hours or overnight. Rinse thoroughly.
Blend the lentils with 2 cups of water until completely smooth (about 1–2 minutes).
Pour the mixture into a saucepan and add salt.
Cook over medium heat, stirring constantly. It will begin to thicken after 5–10 minutes.
Once the mixture is thick like polenta and pulling away from the pan, remove from heat.
Pour into a lightly greased or parchment-lined dish and smooth the top. Let it cool and set in the fridge for at least 1 hour.
Step 2: Fry the Cubes
Once firm, cut the Bean Fu into cubes.
Heat olive oil in a non-stick skillet over medium heat.
Add the cubes and fry until golden brown and crisp on all sides (about 2–3 minutes per side). Remove and drain on paper towels.
Step 3: Make the Dipping Sauce
In a small bowl, whisk together the sesame oil, fish sauce, soy sauce, lemon juice, turmeric, and grated ginger.
Adjust to taste — add more lemon for brightness or soy for saltiness.
To Serve:
Serve the crispy Bean Fu cubes warm with the dipping sauce on the side. Garnish with chopped green onions, sesame seeds, or chili flakes if desired. Njoy!
