I have a good news for you. Very good, in fact. Just keep it as dark as possible - 72% as the lowest, and preferably 85% and higher. If it's too bitter for you, give it a few days - taste buds get retrained quickly if you give them a chance.

Part two. Brisket has been moved from charcoal smoker to a pellet one. First photo shows meat side up, second - fat cap up, as I flipped it when moving. Now it's overnight cook, with check.in the morning. If my calculations are right, I should wake up to 170-180 F internal temperature

Another ambitious multi-hour multi-device cook. Brisket about 15 lbs. Plan is to smoke on mix of charcoal and wood on Masterbuilt for 4-5 hours at 250F, then move it to Pitboss pellet grill for the overnight smoke at 225F. If everything goes as planned, it should reach 195-300 internal temperature by noon or earlier.
