This year’s Spring/Summer Food & Fitness Challenge had a fun twist — two gyms with big groups of participants joined in, so I created special mini-challenges for them: CrossFit Sanitas in Boulder, CO, and Left Hand Muay Thai in Los Angeles.

I want to shine a spotlight on two incredible women who came out on top within their gym communities:
🏆 Leah Wasser from CrossFit Sanitas 
🏆 Vina Ng from Left Hand Muay Thai

Leah lost an impressive 4.7% of her body weight and completely transformed her nutrition habits. She’s now fueling properly for her workouts, building muscle (+2.6 lbs!), and continuing to drop fat in a sustainable way.

Vina’s transformation was jaw-dropping — she lost 8% of her body weight during the Challenge, added 1.8 lbs of muscle, and dropped 12.6 lbs of fat! I triple-checked that stat because it was insane… but yes, she really did it.

Mega proud of James Uryu — the champion of the recent Food & Fitness Challenge! 💪🏆

James showed up every single day for 35 days with incredible consistency. He didn’t have a single non-FFC-approved food (which is super rare — most people have at least one slip!), crushed his workouts daily, and hit his hydration and recovery goals without fail.

Someone said recently, “Oh but you love running, you’re running all the time!” And I LOLd because while it’s not that I dislike running, I really do it because
1️⃣ I want to get better,
2️⃣ I’m working my weaknesses, &
3️⃣ I love experiencing the results of hard work paying off.

🏃🏻‍♀️🏃🏻‍♀️🏃🏻‍♀️

But, honestly? It’s super challenging for me. I am not a strong runner and was teased in the 8th grade when I ran my first race, so I’m really self conscious about it! But I don’t let it stop me. I tied up my laces 👟, did all the training my 🙌 coach .upshaw told me to do, and signed up for the 10K to give myself something to aim for and had. a. blast. 🥳 Although that third pic begs to differ haha. 

Am I now a great runner? 😂 nope. Still working on it but… what’s next up?! Who’s got recs for favorite races of any length? Ok maybe not ANY… let’s stick to halves or less for now. CrossFit is still my main squeeze. 🥰

And what I really want to know is — what weakness do you want to get vulnerable and start to work on? Step up to the challenge and let’s get after it!

This is why you need to always read your labels!

A lot of products may start off very healthy (like the Rx Bar on the left), and as they get popular and need to expand what they offer, they create more products… inevitably with more sugar. In this case almost 3 teaspoons of added sugar (that bar on the right has honey AND coconut sugar… and more ingredients not listed on the front).

Read your labels.
Knowledge is power.
Keep having the original Rx Bar 🤙🏼 but I’d skip the new nut butter & oat line 🙅🏻‍♀️

PS: 4g of added sugar = 1 teaspoon

This Healthy Heart Smoothie (adapted from ) is so much more delicious than expected and a GREAT pre-workout. Here’s my version:

🥛1/2 cup unsweetened vanilla almond milk
💧 1/2 cup water (leave out if you want to make “ice cream”)
🍚 25g (1/4c) frozen riced cauliflower
🍓 45g strawberries (frozen/fresh)
🌿 3 basil leaves
🤎 1/4 teaspoon cinnamon
❤️ 100g steamed beets
🧡 1 tbsp flax
🤍 1/2 scoop vanilla protein powder

Have this ~ 2 hours before your workout to get the benefits of the beets! Why?

🤓 Beets increase the amount of nitric oxide in your body, and this is great because it functions to:
👍 increase blood flow
👍 help with gas exchange (i.e. oxygen and carbon dioxide)
👍 strengthen muscle contractions

Try it out and let me know what you think!

Where my southern Italians at?! 👀

Swipe ⬅️ to see how I took a classic summer southern Italian stew called ciambotta that my mom and nonna would make all summer, every summer and added a 1/2 pound of ground turkey breast to make it a full, delicious, and balanced meal. 😋

It’s super easy!
1️⃣ Heat olive oil and sauté onions.
2️⃣ Add any summer veg you want. (We would sometimes add thinly sliced potatoes too to make it heartier but I’m eating more fruit for my carbs now because, summer.)
3️⃣ Add 14.5-28 oz of diced tomatoes / canned 🍅 , salt, pepper, and Italian seasonings (rub in your hands first to bring out more flavor!).
4️⃣ Cook the protein separately and add when ready.
5️⃣ Add fresh parsley (mine’s from my garden! 🙌) and parmigiano if you want! 😋😋

This mushroom risotto is insane. I normally follow recipes but this one’s all my own. Check out the secret touches I did to make it a bowl of Nutritious Delicious.
* Cinnamon Top Mushrooms and Shiitake fresh from the - mushrooms are one of the few foods with Vitamin D + loads of phytonutrients
* Chicken Bone Broth instead of regular chicken broth to boost collagen, gut health and protein intake
* Seasoned with lapsang souchong… yup that’s right, I used a smoky tea “spice” and salt and I’m basically a genius 🤓😂

Recipe:
1. Heat up 4 cups of bone broth and keep it simmering on the side.
2. Sauté 1/3 # cinnamon top mushrooms and 2/3 # sliced shiitake in just enough butter to barely cover the bottom of the pan. Add the tea spice and salt. Use some of the bone broth to help it cook all the way through. Put this aside.
3. Sauté 70g chopped onions in 1 tbsp olive oil. Add 1 cup Arborio rice. Mix 2-ish minutes until it smells nice and don’t let it stick.
4. Add 1/2 cup Sauvignon blanc into the rice mix and stir stir stir. It smells so dang good already. 🤤
5. Add 1/2-ish cup of bone broth at a time and stir stir stir. Keep doing this until all the bone broth is used up. It might take like 20-30 minutes.
6. Taste it and if it’s creamy and just a touch al dente give yourself a pat on the back and take it off the stove.
7. Add dem shrooms and 1 tbsp butter.
8. Add salt to taste and stir stir stir until the butter is melted.
9. Eat it. But as a side PLEASE because you know… PROTEIN. I had mine with halibut but chicken thigh would have been a better combo imo.

Enjoy!! Eat that nutritious delicious and be happy and healthy. 😁
