Playing with AI and made this video. Then I made myself cry.

Oh how I wish I could go back 5 years and hug myself. There are so many things I’d tell that version of me.

I’d hug her hard and whisper in her ear that she would learn to love herself, lose the weight (physical, mental, and emotional) that was bringing her down.

I’d tell her she’d learn to set boundaries, she wouldn’t be embarrassed going out with her skinny friends, and she’d finally be able to look at herself and smile.

I’d let her know that she would find happiness and peace within herself, she’d help herself, and by doing so help hundreds of others achieve their goals.

I’d tell her that she’s making a difference in so many others’ lives, and she’d wake up feeling grateful each day.

I’d say you don’t know it yet, but you needed a plan, a coach, a community, and structure, and once she had this, she’d slay!

To the old me: I love you. I’ve got you now.💕
To the woman I’m becoming: Let’s go. 🙌

Turkey Club Skewer 🥬 🍅 🥓
Ingredients:
144g Iceburg Lettuce leaves, left whole
91g Tomato, sliced
1oz cooked turkey bacon cooked crisp
5.6 oz Turkey Breast, low sodium
1oz full fat cheese slices
1 ½ Tbsp light mayonnaise
Directions:
Layer ingredients, cut into quarters and serve

I love when clients send me meals! She said it was great, can’t wait to try!

Chicken Scaloppine

1 leaner - 3 Green - 1 Healthy fat - 3 Condiment (per serving)

2 servings

Ingredients:

• 2 tbsp reduced fat margarine, divided
• 1 lb. thin sliced boneless skinless chicken breasts
• 2 cups sliced mixed mushrooms such as cremini, shiitake, button, and oyster
• 1 cup chicken broth
• 4 wedges spreadable cheese such as Swiss Laughing Cow
• 1 cup arugula
• 1 tsp balsamic vinegar

Directions:

1. Heat half of the margarine in a large skillet over medium-high heat. Sauté chicken breasts, in a single layer, 2 to 3 minutes per side, until chicken is browned. Transfer chicken to a plate. Cook the chicken in batches if necessary.
2. To the same skillet, add the remaining margarine. Sauté the mushrooms for about 3 to 5 minutes or until golden brown. Remove mushrooms to plate with chicken.
3. Add the chicken broth to the skillet and simmer for 2 to 3 minutes, scraping up the brown bits from the bottom of the pan.
4. Lower the heat to medium and swirl in the cheese wedges. After the cheese melts, add the chicken, mushrooms, and any resting juices back to skillet. Simmer 1 to 2 minutes until everything is warmed through.
5. Divide chicken between plates and spoon over mushroom gravy. Toss the arugula with the balsamic vinegar and serve on the side.
