Because celiac disease causes malabsorption, those diagnosed with celiac disease face the high probability of concurrent nutritional deficiencies sometimes resulting in anemia or low bone density (osteopenia or osteoporosis).* Those with celiac disease also face the possibility of other disorders related to malabsorption including peripheral neuropathy.*

Since the time of the Second World War, the U.S. government has required that certain staples in the diet be fortified with essential nutrients. Therefore, gluten-containing grains and bread products are usually fortified with iron and B-vitamins. Gluten free foods are not subjected to the same regulations and are often not fortified. In addition, the diet is restrictive, preventing the patient from eating the variety required to attain balanced nutrition.
