WALNUT FIG & BANANA BREAD 🍌🍞

This delicious loaf is just one recipe I made using my grocery haul from !

As I mentioned in my previous post, shopping at Aldi can save you some serious $$ off your weekly grocery bill. But another great way I love to save money off my grocery spend is buy shopping seasonally! 🍎 When fruits and vegetables are in season, they are more affordable and also more delicious!

Shopping seasonally is also a great way to add variety to your meals and maybe try some ingredients you would usually reach for.

Figs are current in season so I loaded up on these delicious fruits at and used some of them to made this recipe, which was a big big hit! Give it a try!

YOU WILL NEED:

2 ripe bananas, mashed
2 eggs
1 tsp vanilla extract
1/4 cup extra virgin olive oil
2 tbsp pure maple syrup
1 cup almond meal
1/2 cup gluten free plain flour
1/3 cup brown sugar
1 tsp ground cinnamon
1 tsp baking powder
Pinch of salt
3 fresh figs, diced
1/2 cup walnuts, chopped

1 fig sliced, for decoration
Extra walnuts, for decoration

HOW TO:

Preheat oven to 180 degrees, fan-forced and line a loaf tin with baking paper.
Add all the wet ingredients to a bowl and combine, then stir in the remaining dry ingredients.
Fold through the fresh figs and chopped walnuts.
Transfer batter into the lined baking tin, top with sliced fig and extra chopped walnuts.
Place in the oven to bake for 50-55 mins or until cooked through.
Allow to cool for 10 minutes before removing from the pan and placing on a wire rack to cool.
Slice, serve and enjoy!

PEANUT BUTTER CUP BALLS 🤩🤤🔥

Some mid-week snack inspo for you 🤩 if you’re like me and have already eaten your way through the snacks you prepped for the week (🤣😬) this recipe is for YOU!

Ridiculously delicious and so super easy to whip up - bet you already have all the ingredients in the cupboard too! So instead of buying supermarket snacks that are loaded with artificial ingredients, give these a try instead!!

ENJOY 💫

PEANUT BUTTER CUP BALLS

INGREDIENTS:
½ cup natural, runny peanut butter (smooth or crunchy is fine)
4 tbsp honey
1 tsp vanilla extract
½ cup coconut flour
¼ cup desiccated coconut

100g dark chocolate (use dairy free if dairy intolerant or vegan), for choc coating

HOW TO:
Add the peanut butter, honey and vanilla to a mixing bowl and combine.
Add in the coconut flour and desiccated coconut, mix again to combine into a thick batter.
Roll batter into balls (makes 8-10), place on a lined tray and place in the freezer for 15 minutes. 
Meanwhile, melt the dark chocolate.
After 15 minutes, remove the peanut butter cup balls from the freezer and individually coat them in the melted chocolate.
Place the coated peanut butter cup balls on a lined tray/plate and place in the fridge to set for 30 minutes.
Enjoy!

Store in the fridge for up to 1 week (but can bet they won't last that long!)

What I’ll be making when I can finally eat solid food again 🥲 4 days post wisdom teeth removal surgery and four days of eating liquids only, I can honestly say I miss texture and solid food 🙃

Please enjoy these on my behalf 🤩 such an easy dinner option that is packed with flavour 🔥

MEXICAN BEEF TACOS

INGREDIENTS:

500g beef mince
1 tbsp olive oil
2 tbsp Mexican Beef Bowl Mix
2 tbsp tomato paste
1/2 cup water
1/4 cup corn kernels (fresh or frozen)

Tortillas (I use GF tortillas)
Salad (lettuce, tomato, cucumber)
Grated Cheese
Taco sauce
Guacamole

HOW TO

1. Heat the olive oil in fry pan over medium high heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain any fat.
2. Add the Mexican beef bowl mix, tomato paste and water. Stir to combine and continue cooking over medium-low heat until the sauce has thickened, about 3-5 minutes. Then stir in corn kernels.
3. Serve on warm tortillas, top with guacamole, salad, cheese & taco sauce.

Vanilla Peanut Banana Smoothie 🥤🍌

One of my go to smoothie combos that will be on repeat this summer ☀️

1 frozen banana
1 tsp peanut butter
1 tsp honey
Dash of ground cinnamon
1 scoop vegan vanilla protein
1 cup almond milk
Handful of ice

The perfect combo of protein, healthy fats and carbs to keep you full for hours 👌🏼 I love this smoothie for an afternoon snack, satisfies all the sweet cravings and keeps me full for hours 🤩

COOKIE DOUGH PROTEIN BARS 🍪🤤

I'm excited to FINALLY have a new recipe to share with you! Life has been a little crazy (to say the least!) with moving into my new apartment last week and settling in, but finally starting to feel on top of things again. And there is nothing like a fridge stocked with healthy treats for the week to help you feel like you've got things together! 🙌🏼

YOU WILL NEED:

2 scoops Vegan Vanilla Protein (Discount code: HAPPYELISE)
1/4 cup almond meal
1 tbsp coconut flour
1/3 cup desiccated coconut
1 tsp vanilla extract
1/3 cup maple syrup (or liquid sweetener of choice)
2/3 cup natural runny peanut butter
1 tbsp coconut oil, melted
Dark chocolate chips

HOW TO:

Add all the dry ingredients to a bowl and combine.
Add in the remaining wet ingredients and mix well until combined and the mixture forms into a dough.
Fold in chocolate chips.
Transfer dough into a lined baking tin and press down firmly.
Place in the freezer for 2 hours to set before cutting into 10 pieces.
Store in the fridge or freezer (allow to defrost before eating if stored in the freezer).

Sunday meal prep inspo ✨

Butter Chicken & coconut rice made using some of the goodies that came in this months box 😍

Ingredients:
2 large chicken breasts, diced
1 sachet butter chicken seasoning
1 can full fat coconut milk
1/2 tsp veg stock paste
2 heaped tbsp tomato paste
Chopped veggies of choice - I used an onion, broccoli, carrot and spinach
Cooked rice (I used the from my box)

Method:
Heat 1 tbsp oil in a fry pan over high heat.
Add in chopped onion and sauté until browned. Then add in diced chicken, cook until brown.
Add in remaining veggies (except spinach), butter chicken seasoning, veg stock and tomato paste. Stir to coat evenly. Then pour in coconut milk and stir through. You can add some extra water here to make more saucy if you like!
Place lid on the fry pan and turn down to a simmer. Leave to cook for 20 minutes, or until chicken and veg are cooked.
Stir through spinach.
Serve with rice and a dollop of coconut yoghurt 👌🏼

Moroccan Pumpkin & Potato Soup 🎃🥣

I've had the biggest cravings for warm, comforting bowls of soup with the cooler weather lately and have been making this recipe on REPEAT! So easy to make and absolutely perfect on those cold nights 👌🏼

For the Soup:
3 cups chopped pumpkin
1 onion, cut into chunks
1 white potato, cut into chunks
1/2 cup coconut cream
2 cup vegetable stock
1.5 tsp SPICETUB | Spice Mixes 🌱]]]]] moroccan chicken mix
2 cloves garlic, chopped
Salt and pepper, to taste

Add all the pumpkin ingredients to a large saucepan (ensure everything is covered in the liquid, if not add a little more). Bring to the boil then turn down to a simmer, cover and leave to cook for 25-30 minutes. Once finished cooking, pour into a blender and blend until smooth (start on a low setting so the blender doesn't explode!).

For the Crispy Chickpeas:
1 can chickpeas
1 tsp SPICETUB | Spice Mixes 🌱]]]]] moroccan chicken mix
Olive oil spray

Preheat your airfryer to 180 degrees. Rinse and drain the chickpeas and place into the airfryer basket. Cook for 5 minutes. After 5 mins, spray with olive oil and sprinkle over SPICETUB | Spice Mixes 🌱]]]]] moroccan chicken mix. Give the basket a good shake so all chickpeas are evenly coated and cook for 20 minutes, or until super crispy! Be sure to give the airfryer basket a shake half way through cooking.

Top your soup with the crispy chickpeas and enjoy!!

STRAWBERRY CRUMBLE (GF/DF) 🍓

The cooler months always have me craving warm, cosy desserts, and a crumble is always a go to!

Serve with some vanilla coconut ice-cream for an absolute heavenly dessert experience!

Serves 3-4

Ingredients:
Filling:
4 cups strawberries, halved
1 tsp vanilla extract
2 tbsp sweetener (maple syrup, stevia, honey etc.)
2 tbsp tapioca flour
Juice of half a lemon

Crumble:

1 cup macadamias (or sub for almonds)
1/2 cup almond meal
1/2 cup shredded coconut
4 tbsp coconut oil, melted
1 tsp vanilla extract
1/2 tsp ground cinnamon
2 tbsp sweetener (I used stevia)

Method:
Preheat the oven to 180C, fan-forced.
Add all the filling ingredients to a large mixing bowl and toss together until you can't see any of the tapioca flour on the strawberries.
Pour filling into a oven-safe baking dish and set aside while you move onto the crumble.
Place the macadamias (or almonds) in a food processor and pulse a few times to form large crumbs.
Add macadamias into a bowl with the other crumble ingredients and mix well.
Pour the crumble on top of the filling layer and spread out evenly.
Place in the preheated oven and bake for 30 minutes, or until golden.
Serve immediately with coconut ice-cream!

CHUNKY MONKEY RICE CAKE SLICE

I ad to try out this rice cake slice trend for myself, with my own little spin of course! 🍌This snack creation may be one of my favourites to date!! So hard to stop at just one slice! 🤩

You NEED to try this! SAVE this post for your long weekend baking! ❣️

INGREDIENTS:

Slice:
8 rice cakes/corn thins
40g (1/2 cup) banana chips, chopped
150g (heaped 1/2 cup) runny peanut butter
50g (2 heaped tbsp) honey
40ml (3 tbsp) coconut oil, melted

Topping:
100g dark chocolate, melted
30g (1 scoop) vegan chocolate protein powder (DC // HAPPYELISE)
75ml almond milk

HOW TO:

Crush the rice cakes and add to a bowl with other remaining slice ingredients. Mix well - use your hands to really get everything mixed through.
Transfer batter into a lined tray and press down evenly - I like to use the bottom of a glass cup for this.
Mix the melted chocolate with the protein and almond milk until smooth, then spread over the slice. Optional: top with desiccated coconut.
Set in the freezer for 2-3 hours, slice and enjoy!
Store in the fridge for up to 5 days.

Anyone else just crave something a lil sweet as soon as 3-4pm hits? Cos same 🙋🏼‍♀️
