Grilled Lemon Herb Chicken with Garlic Parmesan Zucchini
Zesty Grilled Chicken with Garlic Parmesan Zucchini Medley
Ingredients:

4 boneless, skinless chicken breasts
1 lemon, juiced and zested
3 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
2 medium zucchinis, sliced
1/4 cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped
Directions:

In a bowl, combine the lemon juice, zest, olive oil, garlic, oregano, thyme, salt, and pepper. Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the marinade over the chicken. Seal and refrigerate for at least 30 minutes, or up to 2 hours.
Preheat the grill to medium heat. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
While the chicken is grilling, heat a non-stick skillet over medium heat. Add the zucchini slices and cook for 3-4 minutes, stirring occasionally, until slightly tender.
Sprinkle the Parmesan cheese over the zucchini and continue cooking for an additional 2 minutes until the cheese melts and the zucchini is fully cooked.
Serve the grilled chicken alongside the garlic Parmesan zucchini, garnished with fresh parsley.

Mango Salsa Grilled Chicken with Quinoa
Grilled Chicken with Sweet Mango Salsa and Quinoa
Ingredients:
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper, to taste
1 cup quinoa
2 cups water
1 mango, diced
1/2 red onion, diced
1/4 cup cilantro, chopped
1 lime, juiced
1/2 jalapeño, finely chopped (optional)
Directions:

Preheat your grill to medium-high heat.
Season the chicken breasts with olive oil, garlic powder, cumin, chili powder, salt, and pepper.
Grill the chicken for about 6-7 minutes per side or until fully cooked (internal temperature should reach 165°F).
While the chicken is grilling, rinse the quinoa under cold water. In a saucepan, bring 2 cups of water to a boil, then add the quinoa. Reduce the heat, cover, and simmer for 15 minutes, or until the water is absorbed and the quinoa is tender.
For the mango salsa, combine the diced mango, red onion, cilantro, lime juice, and jalapeño (if using) in a bowl. Stir to mix well.
Serve the grilled chicken over a bed of quinoa, topped with the fresh mango salsa.

A flavorful and healthy dish, this blackened salmon is stuffed with a creamy spinach and cheese mixture, making it a perfect meal for any occasion!

📝 Ingredients
4 skinless salmon fillets (about 1.5 inches thick)
Salt and black pepper, to taste
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper (adjust for spice preference)
2 cups fresh spinach leaves
1 tablespoon butter
1/2 cup shredded Parmesan cheese
1/2 cup shredded mozzarella cheese
🍳 Directions
Prepare the Salmon
Preheat your oven to 375°F (190°C).
In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
Carefully slice each salmon fillet horizontally to create a pocket (don’t cut all the way through).
Season both sides of the salmon and inside the pocket with the spice mixture.
Make the Stuffing
Heat butter over medium heat in a skillet. Add spinach and cook until wilted, about 2 minutes.
Remove from heat and mix in the Parmesan and mozzarella cheeses.
Stuff and Cook the Salmon
Stuff each salmon fillet with the spinach and cheese mixture.
Heat olive oil in an oven-safe skillet over medium-high heat. Sear the salmon for 2-3 minutes on each side until a crust forms.
Transfer the skillet to the oven and bake for 8-10 minutes or until the salmon is cooked through and the cheese is melted.
