I used to dream about making my kids beautifully packed and healthy school lunches. Somehow forgetting the fact that beautiful meals require time, effort, energy, and a lot of dish washing. All the while risking the fact that they may only take three bites before declaring their fullness and running away from the table. At some point in my life, around dessert time, my heart longed for bread pudding. A bread pudding that was warm, and sticky, and luscious all at one time. It's sweet, but not too sweet, and soft--so, so, soft and spongey. The brioche bread was golden and soaked in a beautiful vanilla bean custard. We use this blueberry compote instead of maple syrup whenever we have pancakes or waffles. You can use any frozen fruit but frozen blueberries or raspberries work best. It has only 2 tbsp of maple syrup, antioxidants from the blueberries, and chia seeds to add fiber and help to balance any blood sugar spike you may get. As baseball games started today and I feel totally left out. Here's a recipe my husband loves. It's a simple salad with a ton of flavor and we are obsessed. Sometimes i'll serve this with an avocado pasta to round it out but it's great on it's own. Spring means baseball season and though it may only be the start of spring training, to us, that means our time with my Ryan comes to a halt. It also means that the pressure is on and the daily parenting is up to me! I wake up earlier than usual, knowing I may only have a couple minutes to shower. For much of my childhood, Saturday mornings were pancake mornings. My mom would make lemon ricotta pancakes, the lightest and fluffiest pancakes everrrrr. Delicately stirred, the batter speckled with lumps, lemon zest, and airy ricotta cheese. Cooked until golden brown and served on a colorful platter I had painted at Color Me Mine.
