For lunch, I'm having this super simple, easy-to-make meal.

When you look at it, you might ask yourself, "What's so special about it, right?"

Nothing really; it's just a plate of peas, sweet potatoes, beans, and tomato sauce.

However, the magic is in the cooking.
I lightly cooked the sweet potatoes and peas so that they are crunchy. This also makes the carotenoids (a precursor to vitamin A) bioavailable.

Lightly cooking vegetables keeps them low on the Glycemic Index, meaning they don't spike blood glucose compared to vegetables cooked to tenderness.

I didn't use oil to cook, but rather added it to the plate. This reduces the formation of AGEs (Advanced Glycation End-products) that accelerate cellular aging. You can read about it here https://foodnheal.com/glycationhow-your-food-is-aging-you/
