For the paloma mocktail
8 oz grapefruit juice
2 oz lime juice
2 tsp maple syrup, sub agave syrup

For the rim of the glasses
2 tsp granulated sweetener, Sugar, or something like monkfruit sweetener
1 tbsp lime zest
1 tsp tajin, optional, for spice

1 tbsp olive oil
Salt and pepper

2 tsp fresh thyme leaves, add more for garnish

8 oz ricotta cheese (use Kite Hill Ricotta for dairy-free)
1 egg
1/2 cup spinach, chopped fine

1 box gluten-free lasagna sheets (I use jovial)
1 tsp olive oil
1 lb ground beef
2 tsp Italian seasoning blend

1 24oz jar of pasta sauce (sub-nightshade-free marinara)
