Green Goddess Toast

INGREDIENTS

1 garlic clove 🧄
I cup fresh basil 🌿
2 Tbsp fresh tarragon leaves/fresh dill
The zest and juice of 1 lemon 🍋
1/2 English cucumber 🥒; seeded, peeled & roughly chopped
1 Tbsp Boabab powder
2 ripe Avocados 🥑 quartered, peeled and pit removed
2 Tbsp Hemps seeds
1/4 cup of fresh chives, chopped
Splash of olive 🫒 oil
Salt and pepper
Toast of your choice

METHOD

Place the garlic, basil, tarragon/dill, lemon zest and a couple of pinches of salt to a food processor and pulse until a paste forms.

Add the cucumber, avo and Boabab and pulse until desired consistency.

Fold in the lemon juice until the correct acid balance is reached.

Spread on warm toast sprinkled with chives, h**p seeds and freshly ground black pepper.

Right brain activation happens when we actively let go of thoughts by focusing our primary attention on one sensation at a time, such as sound, touch, vision, taste, smell, or breath.

In my yoga and coaching practice I share a powerful mindfulness technique taught by Shirzad Chamine, founder of Positive Intelligence, Inc. He calls it “PQ Repping”.

You will learn to focus on one sensation at a time and let go of thoughts as they come.

This strengthens your mental fitness which is your capacity to respond to challenges with a positive vs negative mindset.

Anyone for Brunch?

Enjoy our delicious brunch recipe from our in Knysna, South Africa.

With love from , award winning cookbook author and private chef.

Roasted red pepper, butternut and kale Farinata
:
INGREDIENTS
3/4 Cup of Chickpea flour
1/2 tsp ground turmeric
125ml extra virgin olive oil (EVOO)
1 red pepper, diced
1 1/2 Cups of butternut, diced
1 Cup of kale, stripped and shredded
1 clove garlic, finely chopped
Pinch of chili flakes
1/2 tsp of ground cumin
1 heaped Tbsp nutritional yeast
2 Tbsp chopped parsley
1 heaped Tbsp toasted pine nuts
Salt and pepper
:
METHOD
Mix 1 cup of tepid water with the chickpea flour, turmeric, pinch of salt and Tbsp of EVVO, cover with cling film and set aside for a minimum of 2 hours or in the fridge overnight.
:
Place a roasting dish in the oven and heat to 220 C degrees.
:
Toss the diced red pepper, butternut, garlic and cumin in 2 Tbsp of EVOO.
:
Leave to marinate for a minimum of 15 minutes and then pour into the heated roasting dish.
:
Roast for 7-10 minutes.
:
Open the oven and place a cast iron frying pan or dish into the oven.
:
Add the shredded kale to the roasting vegetables and stir with a spatula and roast for a further 5-7 minutes or until the edges just start to darken.
:
Remove the vegetables and heated pan from the oven.
:
Skim off any foam that has formed on top of the chickpea batter and discard it.
:
Pour the remaining EVOO into the heated pan and pour half of the chickpea batter into it.
:
Place it in the oven for 3-5 minutes or until it just starts to set.
:
Remove the pan from the oven, disperse roasted vegetables evenly over the surface and pour the rest of the batter over them and return to the oven.
:
Bake until the batter has set and surface is golden brown.
:
Combine the parsley, pine nuts, nutritional yeast with some salt and freshly ground pepper. Sprinkle over the top of the farinata.
:
Cut into wedges and serve.

As promised here comes a first recipe with love from , award winning cookbook author and private chef.

A first favourite dairy & sugar free breakfast or dessert treat from our retreat at Alkira Lodge, Knysna, South Africa.

Enjoy!

Chia Pudding with Strawberries
:
:
INGREDIENTS
1 can coconut milk
3 medjool date
1 tsp vanilla (paste or essence)
4 Tbsp chia seeds
1 cup fresh strawberries
6 mint leaves
6 basil leaves
Pinch salt
Pinch of poppy seeds (optional)

METHOD
Soak the dates in some warm water for 10 minutes.
:
Remove the pits from the dates, place in a blender with the coconut milk and vanilla and blend until smooth.
:
Stir in the Chia seeds and let mixture stand for a few minutes.
:
Pour into glasses or small bowls and let it set for a few hours or overnight.
:
Top the set puddings with a purée of fresh strawberries mint and basil and garnish with sliced strawberries.
