What a gem of a place!
Fynbos Enterprises in Pringle Bay has the friendliest people and most delicious gelato you'll find on this side of the Bay.
And the chocolate gelato is vegan! What a win.

Don't get me started on the gorgeous colours and surroundings. Worth the drive!

It’s a lazy weeknight jam for me.
Lazy doesn’t have to mean boring or tasteless, we’ve got so many textures here, a bit of tang, creaminess, crunch, crisp, bitter, salty, herby and all.
The Bear loves these schnitzel-ish goodies from WOOLWORTHS and I’ll admit, they do the job 😋

Bought apples in bulk and couldn’t get through them fast enough. Waste not want not, they say. And so, mini apple pies, or apple turnovers. Your choice 🍏
So easy to make and so delicious with a cuppa on these proper autumn days.
For me, nothing says autumn like the smell of cinnamon, ginger, nutmeg and baked goods🥧

Was in the mood to upgrade my ago on toast but was low on time.
Sliced and marinaded a for sheets of thin tofu, flash around the pan, mix with some vegan mayo and nori seaweed and yumm!
Doesn't look nearly as good as it tastes, and don't even start on the nutrients loaded here: good fat, protein, omegas, the works!

With so much busy-ness ahead you need to have some tips and tricks up your sleeve.
For me, it's the pre-mix.
They're not all great but when you add YOUR greatness they can be real winners.

My secrets: whipped aquafaba for the egg parts and your favourite plant milk with a table spoon of apple cider vinegar or lemon juice for a vegan buttermilk.
It'll transform those quick and easy packs to deliciousness.

Just because you’re camping doesn’t mean you have to compromise.
With just a little creativity and prep you can enjoy a vegan snack or breakfast wherever you wander.

Do you prefer sweet or savoury breakfasts?

I personally prefer savoury but a sweet one makes it feel like weekend or holiday, such a treat.

Mix your plant milk with apple cider vinegar and allow to stand for a few minutes while mixing your dry ingredients. This way the milk mimics buttermilk and the result: fluffy pancakes!

Had the most incredible morning doing my first ever demo.
I had to overcome the worst case of nerves and imposter syndrome but my guests were so gracious, curious and passionate, they brought their stories and hearts to the table and by the end my anxiety faded and heart was full.

I so look forward to the next and the next 💚
