This morning was a Bucket-List level event for me. Foraging Porcinis in the rain, and absolutely LOVING every moment. Hailey helped and she was actually such a pro mushroom spotter.

Dough #6. She's a beauty. Started with a leaven at 8am on 21/09/2024. 100g discard / 100g water / 100g flour.
Left out at ambient temperature until 5pm, when I combined with the autolyse. Rest. Salt. Rest, stretch and folds x 4. Bulk ferment overnight and then placed in the fridge until this morning .

Baking as Therapy.
Sourdough #4. Finally a crumb I am happy with. This dough follows the methods of mostly, but using the flours I had on hand, and working with the temperature of my kitchen. The weather is still cool, so things grow slowly. Eventually used my proving function to give this dough some more lift before I baked.
The kitchen is smelling heavenly these days.
