Adding flavour to a simple healthy meal is easy with a quick pan sauce. Most chicken piccata recipes contain a lot more oil and butter – this one includes a bit of both, but it is a lighter version that works beautifully if you are trying to manage overall fat intake for health and weight maintenance. I add a lot of chopped parsley, which is an excellent way to add flavour, along with a boost of antioxidants and vitamins.
