lemon poppyseed cupcakes π§π

these cupcakes are THE BOMB
Ingredients:
Dough π
- 2 cups all purpose flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- Zest of 2 lemons
- 2 tbsp poppyseeds
- 1 1/3 cup milk of choice
- 2 tbsp lemon juice
- 1/4 cup coconut/canola oil
- 2 tsp vanilla
Icing π§
- 1 cup powdered sugar
- 1-2 tbsp milk of choice
- 1 tsp lemon juice
- 1/2 tsp vanilla
- 1/2 tsp lemon zest
- 2 tsp poppyseeds
Method:
- preheat oven to 180 degrees
- Mix flour, sugar, baking powder, baking soda, salt, zest and poppyseeds
- In separate bowl, mix milk, lemon juice, oil and vanilla
- Pour wet ingredients into dry and mix
- Spoon into donut or muffin pan
- Bake 12-15 minutes
- Wait to cool before icing
