How to Quick Pickle Veg.

I think the perfect salad has these five components: sweet, salty, sour, crunch and creamy.
This quick pickle is an easy way to elevate the sweet/sour component and is often what I use.
This is so simple and quick to do that there’s really no excuse not to add it to your salad 🥗 plus you’re adding more veg to your salad this way making it easy to eat the rainbow 🌈

= = = RECIPE = = =

INGREDIENTS
Any hard veg thinly sliced (carrot, radish, cucumber etc)
1 part vinegar (I prefer red wine vinegar)
2 parts water
Honey or sweetener (maple, sugar etc)
METHOD
Mix the water and vinegar together and add the honey or sweetener to taste- make sure you have a nice sweet and tangy combination. Mix till your honey/sweetener is dissolved.
Thinly slice your veg and submerge in the sweet and tangy mixture.
Set aside for atleast 30 minutes but an hour or 2 is ideal.
Can be kept in the fridge for a few days.

My word (more like phrase) for 2018 was: SIMPLY SHOW UP.
I didn't put any pressure on myself to have to pump myself up and produce an extroverted Bernice or to be a happy, hand shaking, sales-y, lead the conversation person but to INSTEAD just say yes to life choices/things/events and attend them no matter whether I talk to people or not.

And boy was it a year of attending things and showing up for things!!!!

HOUSE RENOVATION: which included fetching and carrying painters, builders on-site meetings, planning, sorting and decision making of every kind from paint colours to window styles, cupboard and counter styles, and which walls to bash down etc...

GOOD FRIENDS WEDDING: Maid of honour which included bridal shower, wedding dress shopping, brides maids outfit shopping, shoes, hair, nails, make up, bride chats and advice, many car trips, and wedding day duties.

MOVING HOUSE: This happened a week or two before the above mentioned wedding and I couldn't have done it with out my sister in law and mom in law (they kept me sane)!!! Many many many boxes packed and carried, old house cleaning, pet safely relocated to new house and unpacking and sorting at the new place.

OVER SEAS TRIP: Many nights googling, searching and planning, ticket shopping, accommodation booking, paper work and visas and passports (passports and visas took much filling out, sorting and securing -sounds so easy but wasn't as quick as it takes to type this out).
Packing of clothes arranging of house sitter etc...
Showing up and trying to go with the flow on trip as much as possible (remember foreign place and introvert = a little stressed but everything worked out!)

WORK STUDIES: a slight change in work, still in social media but studied and became even more relevant in facebook advertising etc... (many hours of note taking and practice)

FUNERAL: My dad passed away this year. Many hospital visits, family meetings in hospital coffee shops and being present at a large funeral of people (and trying to keep myself together) easier said than done!

OUTCOME : AND HERE WE ARE!!! I showed up to all of this and so much more! There were little things ... (continued in the comments)

There were little things I showed up for too which are little blimps in the every day life, parent life, wife life, as well as daughter and friend etc... BOY am I glad to be on the other end of everything this year. I attended and SHOWED UP even when I didn't feel COMFORTABLE, even when I DIDNT WANT TO and even when it WASN'T EASY!

Whats next I haven't a clue but I know I can show up even when its hard and just stand there and be polite.

Ive been testing out what foods I can eat, for the longest time I’ve had to eliminate everything that was causing a reaction of some kind.
My food choices got smaller and smaller and I felt like I’d never be able to have even a teeny tiny / little bit of healthy foods that even the super healthy, clean eating people ate!!!
But I didn’t give up hope, I worked on myself, my gut, my mindset and my health from every angle.
It took time... there was no quick fix but finally theres been a change and I’ve been able to add in Eggs and Tomatoes!!! 🎉
So eating eggs may seem like a small thing to you but its an amazing deal to me!
Yay eggs!!!

Lately I’ve been determined to show up more often on Instagram LIVE and talk to the camera in hope of spreading happiness, positivity, encouragement and change (even if it’s small) in someone’s life.
I really hope I’m making a difference but even if I’m not, I’ll keep trying because even if 1 person gets a little happier from it then what I showed up for was worth it!

34 days on a natural supplement that helps with appetite and cravings, which can lead to weight loss... Most people only see results at 4 months! I can only attribute my success to my incredibly clean eating and these supplements! YES I am a represent for them - so let me know if you are interested. PS They ARE NOT cheap! BUT so worth it!!
