Nettle pesto? I had no idea and I have bucketloads of nettles growing in my herb garden and ready for turning into tinctures.

Nettles are rich in vitamins and minerals, so making a fresh pesto is a great way to harness the power of these prickly plants.

With plenty of fresh new growth there is an abundance of young tender nettle leaves to forage. Try this tasty recipe to use these nutritious greens!

𝗡𝗲𝘁𝘁𝗹𝗲 𝗣𝗲𝘀𝘁𝗼

🌿 80g Young nettle leaves, (works well with some wild garlic leaves added too),
🌿 20g Fresh basil,
🌿 80g Crushed walnuts
🌿80g Parmesan,
🌿 100mls Olive oil,
🌿 Juice of 1/2 lemon.

There are two methods here – If using a pestle and mortar, finely chop the leaves first, then grind and mix together small quantities at a time.

But if you have a food processor – place the leaves & nuts in to the food processor, just pulse enough to finely chop, but not so long that you are just left with mush!

In a separate bowl, mix together the blitzed leaves with the olive oil, parmesan and lemon juice. Season to taste with salt and pepper.

Store in an airtight jar in the fridge until needed. This tastes great mixed into pasta, drizzled over pizza or as a salad dressing with more oil and lemon juice added.
