Ingredients:
Watermelon rinds, peeled and green skin removed
Red onion, thinly sliced
Fresh parsley, chopped
Olive oil
Lemon juice
Salt and pepper to taste
Optional: feta cheese or crumbled cheese for topping
Instructions:
1Prepare the Rinds:
Peel the green skin off the watermelon rinds and cut them into thin strips or bite-sized pieces. Rinse them thoroughly.
2 Blanch the Rinds:
In a pot of boiling water, blanch the watermelon rinds for a few minutes until they are slightly tender. Drain and let them cool.
3 Assemble the Salad:
In a mixing bowl, combine the blanched watermelon rinds, thinly sliced red onion, and chopped parsley.
4Dressing:
In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper to create a simple dressing.
5.Combine and Toss:
Pour the dressing over the watermelon rind mixture and gently toss until everything is well coated.
6.Chill and Serve:
