2 tsp minced red onion, soaked in cold water for 5 minutes, then drained and rinsed
1 Tbsp minced celery
1 Tbsp minced dill
1/4 C mayo
1/2 tsp fresh lemon juice

These pesto baked eggs couldn’t be easier – here’s everything you’ll need to prepare the recipe:

Pesto:

walnuts, or a mix of walnuts and pine nuts
garlic
fresh basil leaves
baby spinach or kale
olive oil
lemon
nutritional yeast (optional)
sea salt and black pepper

Ingredients
3/4 cup natural peanut butter (or nut/seed butter of choice)
1/2 cup pumpkin puree
1/2 cup vanilla protein powder
1 tbsp pumpkin pie spice
1/2 tsp sea salt
chocolate chips (optional— for topping)
Instructions
Line loaf pan with parchment paper and set aside.
Mix all ingredients super well until you reach a thick dough consistency.
Press dough into loaf pan and flatten the top with a spoon or your hands.
Press in chocolate chips and set in the freezer for 1 hour.

Easy chicken Jalfrezi

1 lb boneless chicken
½ onion, diced, approx half cup
1 tsp ginger paste
½ tsp garlic paste
2 tomatoes (diced)
¾-1 tsp red chili powder
¾ tsp salt
1 tsp soy sauce
1 diced green pepper
3-4 sliced green chilies sliced lengthwise (halved)
½-3/4 tsp freshly cracked black pepper

Instructions
Heat 3-4 tbsp of oil in a wok or saucepan with a lid
Add the onions and saute on medium heat until translucent
Now stir in the chicken, ginger paste, and garlic paste. Mix well and cook till all the pieces change color.
Mix in the tomatoes, salt, chili powder and simmer covered until the chicken is tender. This takes me roughly 20 minutes from previously frozen chicken, fresh is usually quicker.
Add the soy sauce, green peppers, mix well and cook partially covered until the green pepper is tender crisp - 5-7 minutes
Final steps: stir in your black pepper, your sliced chilies and adjust seasoning - you may need a pinch of salt. Dig in!
