Creamy Sweet Potato Lentil and Spinach Stew

My schedule has been a sight for sore eyes recently, between motherhood, juggling personal projects, running my business and trying to stay on top of the endless list of life admin – it’s been a lot to say the least. Did someone say all vegan brunch? 👀🌱

The Guilt-Free Kitchen Party at did not disappoint! The Asian-inspired plant forward dishes were tasty, beautifully plated and the service was fantastic too. 🤌🏼

The brunch is on every Saturday from 1-4 pm at (and yes, they have a “guilty” menu too if you’re dining with non-veg eaters) 🍽️

A few more musings after a month at - time is seriously flying! 📆

1. Easiest way to make a dish look Michelin star-worthy: put a ring on it 💍

Lessons learned after my first two weeks at 👩🏻‍🍳

- it’s not a race or a competition, I’m here to learn and grow
- teamwork in the kitchen is key
- making curry at 8 AM is no easy feat 😂

In all seriousness - grateful for every second of this experience lucky to have such great peers and talented chefs to learn from every day 🙏🏼

Borderline obsessed with all of ’s cheeses but their Burella (plant-based Burrata) is a WINNER 😍 Served it on top of a simple arugula salad with balsamic dressing, avocado, caramelised pecans and extra virgin olive oil 🌱🍅

This impromptu cauliflower chickpea and peanut butter curry is proof that necessity is the mother of invention! 👌🏼

I had a bunch of fresh veg to use and this dish totally hit the spot. 🍛 Tossed in cauliflower, carrots, onions, garlic, coconut milk, powdered peanut butter, chilli oil, lemon juice, fresh coriander and a can of drained chickpeas and let the Dutch oven work its magic 🙏🏼 served with flat rice noodles and a squeeze of lemon 🍋

Recipe coming just as soon as I can recreate this satisfying and hearty curry with exact measurements 😅

Truly one of the most exquisite vegan dining experiences I’ve had in a very long time was courtesy of the wonderful in London. I couldn’t resist going for the discovery menu to sample as much of ’s creations as possible – highlights included the roasted cauliflower and sweet potato fritter, the crispy polenta with charred courgettes and peasthe ‘Chinatown’ purple potatoes in a sticky soy dressing. Everything from the service, to the incredible flavours and textures and the inspired presentation was truly delightful – but above all this meal left me seriously inspired and reminded me just how passionate I am about plant-based cooking.

If you’re in London anytime soon, I couldn’t recommend this place enough. Thank you, Tendril team!
