Autumn Focaccia with Kissabel®️Apple,
Blue Cheese, Sage & Red Onion, drizzled with Hot Honey 🍎

These apples are sooo beautiful!
Sweet and slightly tart, reminiscent of fresh berries and the texture is everything you want an apple to be. Perfect as is, but also delicious, baked.

These locally grown Kissabel®️apples produced by are available for a limited time only at participating , and across South Africa.

🍎RECIPE🍎

Serves: 6 – 8 people

Focaccia dough:
4 cups bread flour
1 x 10g sachet instant yeast
1 tsp coarse salt
1 tsp sugar
1 ½ cups warm water
Olive oil for drizzling

Topping:
1-2 Kissabel®️apples, thinly sliced
1 small red onion, thinly sliced
100g creamy blue cheese, crumbled
Handful of sage leaves
Honey for drizzling
Coarse salt and pepper to taste

Method:
Place dry ingredients in a large bowl.
Add water and mix until a dough is formed.
On a floured surface, knead the dough for about 8 minutes until smooth with a little bounce to it. Place in the same bowl, drizzle with olive oil and cover. Allow to proof somewhere warm for 1 hour (until risen double in size).
Grease a large baking dish (30x 25cm) well with olive oil.
Press risen dough into the baking dish using your fingers. Embed the apples, red onion, blue cheese and sage leaves into the dough. Season with coarse salt and pepper.
Drizzle generously with olive oil.
Cover loosely and proof again for 45 minutes.
Preheat the oven to 180°C.
Bake for 25 minutes.
Drizzle immediately with heated honey.
Enjoy with some extra fresh Kissabel®️ apple slices.

Cheat Tip: Buy fresh bread dough from your local bakery if pushed for time.

Thai Fish Curry

Spent the weekend clearing out the fridge, freezer and pantry and this nourishing and delish fish curry happened 🔥

500 g Mahi Mahi fillets, cut into chunks
Seasoned corn flour for coating
1 Tbs Coconut oil
1 bunch of Spring Onions, sliced
Lemongrass, bruised and cut into shards
3 Garlic cloves, crushed
2 Tbsp grated Ginger
½ Tsp ground Turmeric
2 Tbsp Red Curry Paste
400 ml Coconut Milk
2 ripe Tomatoes, cut into thin wedges
Zest and juice of 2 Limes
1 Tbsp Fish Sauce
100 g Green Beans, trimmed and halved
A handful of Fresh Coriander, chopped

Lightly coat the fish in seasoned corn flour.
In a medium pot, heat the coconut oil.

Add springs onion, lemongrass, garlic, ginger, turmeric and curry paste. Sauté until fragrant.

Add coconut milk and tomatoes and simmer covered for 20 minutes.

Meanwhile, in a separate non stick pan, heat a bit of coconut oil and brown the fish chunks, turning once. Fish should still be raw in the center.
Add browned fish to the simmering sauce, together with fish sauce, lime, juice and zest, green beans and coriander. Simmer covered for 8 -10 minutes.

Serve with toasted coconut and coriander brown rice and extra lime wedges.

Arrived back in Dubai, inspired and full of gratitude for our family, friends, honest food, gorgeous landscape and all the little moments of more “being” and less doing.
