These are my new favourite mushrooms of late. They are packed with a nutty flavour, a delicious crunchy texture and are packed with fibre, b vitamins and antioxidants. I fry them lightly in butter and eat them as a side, add them to stir-fries for a crunch and add them to a salad for the same effect. Try something new this week and let me know what you think of these Enoki mushrooms.
