Last weekend was so fun at Happyway’s mindfulness event. We got to enjoy a nutrition talk with and a work out by boss girl . Such a lovely day meeting everyone.

Happyway has been a company I have supported for many years. The products are fantastic, I secretly love that they started here in SA.

Siara had a really fun time baking hot cross buns. First time I’ve let her have full control on preparing, she did so well. There wasn’t much mess at all 😂

Recipe for Siara’s hot cross buns

Ingredients
560g all purpose flour
7g dry yeast
130g stevia sugar
150g Chobani yoghurt
2tsp Vanilla essence
2 tsp cinnamon
220 mls almond milk
200g dark chocolate

Wash
60g sugar free maple syrup

Cross
60g icing sugar
2tsp almond milk

Method
1. Place dry yeast, 1 tbsp of flour and sugar into a medium sized bowl. Add 50mls boiling water and leave for a few minutes until yeast starts to bubble.

2. Combine all ingredients into the bowl except chocolate pieces. Continue to stir.

3. Using a mixer knead flour mixture together until a dough has formed.

4. Place chocolate into the bowl and knead for another minute until combined.

5. Grease a bowl and set aside.

6. Place dough onto a surface and knead into a ball and place into greased bowl.

7. Set aside for one hour to rise.

8. Seperate into 12 balls and place on a lined baking tray. Wash with maple syrup.

9. Cook for 20 minutes and set aside until cooked down

10. Once cooled pipe crosses onto the top.

Serve

🥗 Easy lunch Ideas 🥗

Tuna Poke Bowl

Prep 6 minutes
Serves 1

Ingredients
78g can in olive oil
80g chickpeas
1/4 cucumber, grated
1 carrot, grated
200g cooked brown rice
25g Fetta
Drizzle perinase sauce

Directions
1. Combine all ingredients into a bowl and top with perinase sauce.
Serve
