SPRING RECIPE - Cold Rolls
Such a versatile lunch option that can cater to many dietary requirements.
Here's what you need:
- Rice Paper Rolls
- Protein Source (E.g. Chicken, Prawns or Tofu)
- Thinly Sliced Vegetables (E.g. Carrot, Cabbage, Capsicum, Lettuce, Cucumber)
- Vermicelli Rice Noodles (optional)
- Soy Sauce or Sweet Chilli Sauce for serving
How to prepare:
1. Prepare a large bowl with hot water to soak the rice paper.
2. Cook Rice Noodles (if using) according to packet instructions.
3. Dip the rice paper in water moving it around until it becomes soft then transfer flat onto a plate.
4. From here load up the Rice Paper with your chosen fillings.
5. Fold each side over and then begin to roll it up until it is completely wrapped.
6. Continue with remaining rice paper and use all the ingredients you have prepared.
7. Have 2-3 per serving with some dipping sauce (you can make a few days worth at a time).
8. Keep refrigerated and in an airtight container.
