Carrot & Chicken Breakfast Muffins 🫶

These muffins are packed with nourishing ingredients like carrot, spring onion and gently poached chicken, bringing together comfort and nutrition in every bite.

Makes: 13 muffins
Ingredients
• 2 medium chicken breasts (300 g)
• 5 cloves garlic
• 1 celery stick, diced
• 1 bay leaf (optional)
• 350 g grated carrot or squash
• 2 spring onions, finely chopped
• 1 tsp cinnamon
• 1 tsp salt
• 1 Tbsp olive oil (add after phase 2 if following reset)
Method
1️⃣ Preheat oven to 190 °C and boil water.
2️⃣ Simmer chicken with garlic, celery, salt, and bay leaf for 15 mins. Cool slightly, shred, and chop.
3️⃣ Combine chicken, garlic, cinnamon, salt, onions, and grated carrot (squeeze out some juice). Add olive oil.
4️⃣ Shape into small patties and place in greased muffin wrappers.
5️⃣ Bake for 20 mins until golden. Cool slightly and enjoy!
Store in an airtight container for up to 3 days, perfect for a grab-and-go breakfast or lunchbox addition.
