As the weather cools, we naturally gravitate towards meals that warm us up from within…
This slow cooker lamb shank recipe, is easy peasy, nourishing and something the whole family will enjoy!
Ingredients for 4:
* 4 lamb shanks
* 1/4 cup of plain flour (I used gluten free)
* Olive Oil
* 3 carrots, peeled, diced
* 4 celery stalks, chopped
* 1 brown onion, diced
* 800g crushed tomatoes
* 2 garlic cloves, crushed
* 1/4 cup tomato paste
* 2 tbsp Worcestershire sauce
* 1 cup red wine (I used non alcoholic)
* 1 cups water
* 2 beef stock cubes, crushed or 1.5 cups of beef bone broth liquid
* 4 sprigs of thyme
* 2 dried bay leaves
* Mash potatoes, broccolini and peas to serve
Method:
1. Place flour, salt and pepper and lamb shanks in a plastic bag and shake it all about
2. Heat olive oil in a large frying pan on a medium heat. Add the lamb shanks to frying pan and cook for approx 5 minutes or until brown. I recommend doing this 2 at a time and put lamb shanks aside on a plate
3. Add additional oil if needed and add the onion to the pan and cook down until translucent. Then add celery, garlic and carrot until soft and place them in the slow cooker and put the lamb shanks on top
4. In a separate bowl add tomatoes, stock, water, paste, Worcestershire sauce and optional red wine, mix together and then add them to the slow cooker. You want the lamb shanks submerged into the liquid. Add salt and pepper, bay leaves and sprig of thyme to the slow cooker
5. Place slow cooker on low and cook for 8 hours or high for 6 hours
6. When shanks are falling off the bone steam your green vegetables and boil your potatoes for mash
7. Enjoy! Any leftover meat, strip and make it into pasta sauce for the next day 🍝
