Overnight oat & chia pudding 🥰🙏 I almost always take this to work for breakfast because it is so easy, delicious and nutritious ❤️ however it doesn’t always look like this once I take it out at work 🤣 this photo is from the archives… gosh I miss my camera!

My favourite recipe normally includes:
- 1/2 cup oats
- 2 Tbsp chia seeds
- tbsp h**p seeds
- sooonful of either flaxseeds, sunflower or pumpkin seeds
- 1 x serve protein powder
- 1 cup of water (approx)
- mixed frozen berries
- dollop of coconut yoghurt

I just prep mine the night before so that in the morning everything is soaked, defrosted, flavoursome and ready to go 🙏🌟 No better way to start the day - full of protein, fibre & healthy fats!

Our body gives us signs daily - when you think about it our body is freaking incredible.

Our body gives us signs
When we are hungry
When we are tired
When we are happy

And signs that something may be a little off. How long to you normally take to acknowledge these symptoms and stop brush it off? It’s usually until those signs or symptoms get pretty severe.

But here’s the thing! The sooner you get on top of it, the better it will be (this is why preventative medicine is so important) 🥰 The two most common excuses all practitioners hear are I’ll book in when I have the time and/or money (I am so guilty of this too by the way). But honey..... let me tell you the sooner you book in the more time and money you will have 🙌🏼🥰

Often a lot of these symptoms can be brushed off as ‘normal’. However just because something is common doesn’t mean it’s normal or healthy!

Some common signs and symptoms that are your body trying to tell you there is an imbalance or something isn’t quite right
- loose stools/urgency, mucous in the stools, constipation or alternating bowel movements, painful and constant bloating, loss of appetite, increased gas, nausea
- Painful periods, PMS, absent periods, irregular periods.
- Hair loss, cold hands and feet, lower mood, depression
- Headaches, Migraines, exhaustion, brain fog, memory loss, tingling in hands and feet, anxiety, dizziness.
- Loss of taste, slow wound healing, frequent colds,
- Acne, psoriasis, eczema, dry skin.

In no way am I saying any of this to scare you (as I say in no way is anyone’s health 100% all the time) but most of the time a few little tweaks can make a tremendous difference ❤️ Just a reminder to take care of yourself and book that appointment you have been meaning to do!! When you take care of yourself, then your best-self can shine! ✨🌟

Apple Berry Crumble (Vegan, GF*)

For the Topping
- 1 cup of rolled oats (use GF oats if required*)
- 1/2 cup buckwheat flour (or your favourite flour)
- 1 tsp cinnamon
- 2 Tbsp maple syrup
- 2 Tbsp Coconut oil

For the Filling:
- 2-3x diced apples (I had red and green on hand so used a mixture. Use red apples if you prefer a sweeter flavour and green apples if you prefer a more tart flavour).
- 1x cup of frozen mixed berries (thawed)
- 2 Tbsp corn starch
- 1-2 tsp cinnamon
- 1/4 tsp nutmeg

** If you want to make this more sweet I would also add 2 tbsp maple syrup. However, the natural sweetness of the berries and apples were enough for me 

Method:
1. Preheat oven to 180 °C and coat a cooking tin with coconut oil or cooking spray.
2. To make the topping mix together, oats, buckwheat flour and cinnamon in a bowl. Then pour maple syrup and coconut oil in and stir until combined.
3. For the filling, toss the berries and apples with the cornstarch, nutmeg and cinnamon in a larger bowl until even coated.
4. Place the filling in the pre lines tray and press evenly with spatula.
5. Sprinkle the topping evenly onto of the mixture and again press down with spatula until mixture is covered.
6. Bake for approximately 60 minutes or until golden and crispy on the top and the apples are soft and cooked on the inside.
7. Allow to cool to roo temperature, then refrigerate for 2-3 hours to allow mixture to thicken.

I loved serving this with my favourite coconut yoghurt in the morning for breakfast :)

Ps this was so hard to take photos of 😂but it was so good!!
