🎂 Celebration Cakes - not naughty but nice 😉
Cheesecake – a favourite amongst many but also one of the cakes highest in calories and saturated fat. Not the best – usually- for people watching their weight or cholesterol levels. But this defies the odds! 😋
After many hours labouring in my kitchen (and taste tests!) I came up with this recipe, that's not only weight friendly - it's also suitable for people with Diabetes, or high cholesterol.
And you don't have to only make it for a 'special occasion'. If you've got a bit of a sweet tooth, any special occasion will do – or even – “just because you like a sweet treat without the consequences"
– which is the ‘usual’ fat, sugar and calorie load.
I called this one my ‘Flower cake’ with this particular topping decoration.
It’s actually a ‘Baked ricotta cheesecake with a roast almond base’ and it's lovely decorated with berries and mango.
1 slice has only 240 calories, less than 7g saturated fat and less than 3 g sugar but no-one would ever know! - "Because it tastes so good it couldn’t possibly be healthy or ‘weight friendly’."
