Market day yields these juicy little Tommy tomatoes from a local grower. Packed with antioxidants, nutrients like lutein, xeanthin and beta-carotene that are esp. good for your eyes. Oh and vitamin C...so good in so many ways.
Teamed my tomatoes with an avocado (another wonder fruit) olive oil, splash of balsamic vinegar, S&P and basil.
So deliciously simple.

I find myself asking that age old question on a too regular basis lately - "What shall I cook for dinner?".
Spending time making decisions constantly through the day on routine decisions, like the what's for dinner scenario, can be tiring and leaves little time and stamina for creativity and attention you want to give to create new healthy habits.
So this week MY focus is creating a monthly menu plan for my family to simplify that process. Here I am cooking a very large pot of lentil vegetable and bean chilli off my menu. Having a dish where I cook once and get another couple of meals. Bonus timesaver!!

Baking seed breads. Baking your own bread means cutting out nasties and adding in some goodies. With all the machines available these days you probably won't have to put ya back into it to knead it. I use a Thermomix.
Ist one is a Gluten/egg/yeast free bread and 2nd is a regular loaf (Thermomix recipe). The GF is light and spongy and so easy to make. Slice it up and freeze it. Thanks to a friend of mine for showing me this recipe https://elavegan.com/gluten-free-vegan-bread/ Happy baking!!

Wow! I have moved to Queensland!! It's been a whole year since I posted. I definitely went under the radar towards the end of the year for a variety of reasons -but I am back to work.

Nothing to lose..everything to gain!

100g each of fennel, beetroot, celery, pineapple.
8 mint leaves
1/2 lemon
Cup of filtered water

Put in blender and blitz.

Optional...I added a tbsp of h**p seed for an extra nudge of protein and essential fatty acids.
