It’s Elderflower season here in the Northern Rivers. Without a tree in our new garden, for the first time in many years I have had to wild harvest.
Fortunately there are several possibilities for easy harvest close to home.
I made tincture to last for the next year and with a little bit left over thought I would attempt a “St Germaine” style liqueur - fresh elder blossom and pear with a touch of lemon juice and a dash of honey.
The finger dip test reveals that this has promise mixed with soda water as a summer cordial!
