Each jar is a reflection of the land and the seasons, harvested in small, limited batches to maintain quality, character, and freshness. Our bees forage freely in the pristine Apple Tree Creek Valley in Queensland, surrounded by native flora and free from industrial farming. Nectar is gathered from native blossoms including Apple Tree Gum, Iron Bark, Stringy Bark, and other select Eucalyptus varieties, producing a honey rich in flavour, colour, and complexity. • No pesticides or chemicals are used—our hives are situated far from intensive agriculture.
• Harvesting is done ethically and gently, ensuring the wellbeing of the hives.
• We are committed to natural and sustainable methods, taking only the surplus honey after abundant nectar flows.

Apple Tree Creek Honey & Thyme Roasted Camembert or Brie
Perfect for: A cosy night in, or an impressive cheese board addition.
Ingredients
• 1 whole Camembert or Brie cheese (in wooden box, if available – try Aldi)
• 2–3 tbsp Apple Tree Creek Honey
• 2–3 sprigs fresh thyme (or rosemary for a stronger flavour)
• 1 clove garlic, thinly sliced
• Freshly cracked black pepper
• Crusty bread or crackers, to serve
Method
1. Preheat oven to 180°C (350°F).
2. If your Camembert/Brie is in a wooden box, remove plastic wrapping, place back into the box, and score the top in a criss-cross pattern.
3. Tuck slices of garlic and sprigs of thyme into the cuts.
4. Drizzle generously with Apple Tree Creek Honey.
5. Sprinkle with black pepper.
6. Place on a baking tray (to catch drips) and bake for 12–15 minutes, or until the cheese is gooey inside.
7. Serve immediately with crusty bread or crackers for dipping.

🍯 Rainy Day Baked Honey Pudding
Sweetened with Apple Tree Creek Honey
Ingredients (Serves 4–6)
• 1 cup self-raising flour
• ½ cup sugar
• 1 large egg
• 60g butter, melted
• ½ cup milk
• ¼ cup Apple Tree Creek Honey
For the Sauce
• ½ cup brown sugar
• 2 tbsp Apple Tree Creek Honey
• 1 cup boiling water
• 30g butter
Method
1. Preheat oven to 180°C (160°C fan-forced).
2. In a bowl, mix flour and sugar.
3. In another bowl, whisk egg, melted butter, milk, and honey until smooth.
4. Combine wet and dry ingredients, stirring gently.
5. Pour batter into a greased ovenproof dish.
6. In a saucepan, combine sauce ingredients. Bring to a gentle boil, stirring until butter melts.
7. Carefully pour sauce over the batter (use the back of a spoon to avoid splashing).
8. Bake for 30–35 minutes, until golden and set on top.
Serve warm with cream, custard, or vanilla ice cream — and extra honey drizzle for good measure.

🍯 Fermented Garlic Honey – Apple Tree Creek Honey Recipe 🍯
This is the perfect winter wellness boost! Garlic and honey are both full of natural goodness – together they make a delicious home remedy to help support your immune system.

🕰 Prep time: 20 minutes
⏳ Fermenting time: 30 days (but you can start tasting sooner!)
🍽 Makes: About 1½ cups

✨ You’ll need:

250g whole garlic cloves – peeled and slightly crushed

350g raw Apple Tree Creek Honey (or enough to completely cover the garlic)

1 clean, wide-mouth 500ml glass jar

🧄 How to make it:

Place peeled garlic cloves into the jar.

Pour over enough Apple Tree Creek Honey to cover all the garlic. Make sure every clove is coated.

Loosely place the lid on and store in a cool, dark spot.

Once a day, tighten the lid and gently flip the jar upside down so the honey coats the garlic. Loosen the lid again before returning it upright.

After a few days to a week, you’ll notice tiny bubbles – that means fermentation has begun!

Allow it to ferment for at least 1 month for best flavour. Over time, the garlic will mellow and the honey will become runnier.

Store in a cool place – it can last many months (even a year or more).

💡 Notes:

Always use raw honey – this contains the natural bacteria and wild yeast needed for fermentation.

Sometimes the garlic turns bluish or green – this is harmless and still perfectly fine to eat.

Not suitable for children under 12 months.

Enjoy straight from the spoon, add to dressings, or stir into warm drinks (not boiling) for a soothing winter tonic. 🌿

How to Truly Help Bees: A Beekeeper’s Advice 🐝💛

As a beekeeper, we strongly advise against leaving out fruit for bees. While it may seem like a kind gesture, fruit left in the sun or shade quickly develops harmful bacteria, which can be dangerous for bees. If they collect contaminated food and bring it back to the hive, it can compromise their stored honey and potentially harm the entire colony.

If you truly want to support bees, the best thing you can do is set up a proper watering station. Simply place a shallow dish of fresh water with small rocks or sticks inside, creating safe landing spots to prevent them from drowning.

For an even greater benefit, add a pinch of pink Himalayan sea salt to the water. This specific type of salt contains essential minerals that bees naturally seek out. These minerals help bees regulate their hive’s internal temperature, maintaining a steady 32 degC—a critical factor for honey production and raising their young.

However, please do not feed bees directly—beekeepers strongly discourage this practice. Bees thrive best when they collect their own food from natural sources, which strengthens their immune systems and supports their overall health.

By providing clean, mineral-rich water, you’re offering bees exactly what they need to thrive—in a way that truly benefits them and the environment! 🌍🐝💛
