Rocket pesto. A little goes a long way.
Not much growing in the veggie patch in the last washed our days of winter ☔️ a bunch of hardy rocket whizzed up with olive oil, ground almonds and preserved lemon and roast garlic from the pantry is enough to brighten a simple Vichyssoise for lunch.

The purpose of this post? Always choose a who can cook.

Thanks to the Abruzzese shopper at who told me how to make the most of Rappa in this dish.

Rappa is highly seasonal and depends on rainfall early in the winter so know your Italian Mercato Manager well and get in early.

Oriecchette, garlic, olive oil, fresh sausage and parmesan. I added a splash of orange Ajvar, baked a ciabatta and a simple soup of pureed white beans cooked with preserved lemon, bay and garlic and thinned with the Rappa cooking water. Tiramisu for afters.
