Pumpkin Banana Bread 🍞
This delicious, moist & fluffy pumpkin banana bread is so easy to make with just few ingredients. Why buy $6 a slice when you can make a whole loaf at home 🧡
Ingredients:
1/2 cup softened butter
1 cup dark sugar
2 large eggs
1 cup canned pureed pumpkin
3 overripe bananas
2 tbsp vanilla extract
2 cups plain flour
2 tsp cinnamon powder
1 tsp baking soda
1 tsp salt
Icing Glaze:
3 tbsp butter
1/4 cup maple syrup
1 cup powdered sugar
1 tbsp milk
1 tbsp vanilla extract
Method:
1. In a mixing bowl, add the butter, brown sugar, 2 eggs then add your pureed pumpkin & mashed bananas. (I like to make my banana bread with still bits of pieces left of bananas when I take a bite)
2. Whisk until well combined! It will look a little coagulated at this point and that’s normal.
3. Add in your dry ingredients — flour, salt, cinnamon and baking soda.
4. Pour batter in your pan then bake it for 170 degrees for 50-55 minutes (check it time to time as ovens works differently) half way through the time, make sure you cover your banana bread with aluminium foil so it doesn’t get burnt on top.
5. While that’s baking, make your maple glaze — in a bowl add your melted butter, maple syrup, powdered icing, milk & vanilla extract then whisk all ingredients together until well combined.
6. Once your loaf is done, let it cool down for 15 minutes then you pour your maple glaze.
