🌿 January Recovery Soup

Healing Chicken, Mushroom, Lentil & Vegetable Broth
This soup is deeply nourishing without being heavy — ideal for the first week of January when the body is ready for gentle rebuilding rather than restriction.

Why mushrooms are a great addition
Support immune function
Provide minerals and B-vitamins for energy
Add depth and satisfaction without taxing digestion
Help the body transition back to lighter, balanced eating

Ingredients
1 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, crushed
1 tsp ground turmeric
1 tsp ground cumin
2 chicken thighs (skin removed if preferred), diced
1 cup mushrooms (button, Swiss brown, or shiitake), sliced
1 carrot, diced
1 celery stalk, sliced
1 zucchini, diced
½–1 cup red lentils, rinsed
1–1.2 litres good-quality chicken broth or bone broth
Juice of ½ lemon
Sea salt & cracked pepper to taste
Fresh parsley or coriander to serve
Method
Gently sauté onion in olive oil until soft.
Add garlic, turmeric and cumin; stir until fragrant.
Add chicken and lightly seal.
Add mushrooms and cook for 2–3 minutes until softened.
Add vegetables and lentils, stirring gently.
Pour in broth, bring to a gentle boil, then reduce to a simmer for 25–30 minutes.
Season lightly, finish with lemon juice and fresh herbs.
