Dairy-Free Sourdough Banana Bread 🍌🥖
I’m finally up and moving after my C-section, and I couldn’t wait to get back to making nourishing food for my family. With some overripe bananas on hand, I whipped up my tried-and-tested healthier banana bread while bubba was napping.
Here’s the recipe—perfect for a wholesome snack! ⬇️
✨ Ingredients:
✔️ 150g sourdough discard
✔️ 2 ripe bananas, mashed
✔️ 2 tbsp olive oil
✔️ 2 tbsp coconut oil
✔️ 1/3 cup almond milk (or milk of choice)
✔️ 1 cup self-raising flour (or gluten-free option)
✔️ 2/3 cup almond meal
✔️ 2 scoops Prana On plant protein powder (~50g)
✔️ 2 flax eggs (or real eggs)
✔️ 1 cup coconut sugar
✔️ 1 tsp baking powder
✔️ 1/2 tsp vanilla essence
✨ Method:
1️⃣ Preheat oven to 200°C.
2️⃣ In a large bowl, mix sourdough discard, mashed banana, eggs, milk & vanilla.
3️⃣ Sift in dry ingredients & stir well.
4️⃣ Pour into a lined or greased tin.
5️⃣ Bake at 200°C for 15 min, then reduce to 170°C and bake for 50 min.
6️⃣ Let cool in the tin before slicing.
Optional add-ins: choc chips, pear, blueberries, or desiccated coconut for extra yum!
