Pulled chicken tortillas from the diabetes cookbook

Another great lower carb meal (though I wasn’t a big fan of the low carb wraps we bought 🤭). This meal would be really good on a warm day too. I’m definitely starting to look for summer-ish meals … tip: check out all the beef salads on Cookidoo 🤤

Korean beef lettuce cups with pickles!!
This one is from the Diabetes cookbook. I’ve plated it a little different from the Cookidoo picture (with homegrown cos lettuce 💪). The pickled veg is a great touch. With the update to Cookidoo I was able to wander away and my phone alerted me to how long the cook was.

It's strawberry season!!
I went to a scrapbooking weekend last weekend and as I had just visited the Russell Rd strawberry farm days before what was I to do? Strawberry Bavarois of course! It's a bit different to a cheesecake and absolutely scrumptious 🤤. Link in the comments

Since it is still a little chilly are you are looking for soup recipes? Here are two ideas … both in cookidoo:
1) Chunky vegetable and barley soup
2) Lamb and barley soup
I do have a thing for barley in soup. I do love my soup to have some chunk to it.
