I made it during a Zoom session with my new Team Leader Kylee on Wednesday night. Looks like we will be doing the Zoom thing regularly so keep an eye out in my socials for the link (it'll likely be the same link each week).
What's your favourite flavour of cheesecake?

I do have a thing for barley in soup. I do love my soup to have some chunk to it.

I don’t remember how many times I’ve made this and how many times I’ve recommended it to people. It’s been in the recipe community for 10 years now. Sometimes it fits though (damn it), like the time last week when I thought I’d start making a Biscoff cheesecake at 2pm, then read the instructions - refrigerate for 6 hours or overnight. P**p.

So I went to the Biscoff website and found this little number that I could whip up in less than 30 minutes 🎉. I converted it to use the Thermomix. It went down a treat.

I was lucky enough to attend a Skinnymixers class for consultants last night and met the amazing and talented Nikalene! I learned so much and found out that even with her in-depth product knowledge Nikalene has hosted at least 10 demos over the years herself … and learns something new each time. I love learning/trying new techniques.
When I stayed at Mandy and Chris’ place they served a delicious crumbed chicken. As it happens Chris used a technique that I hadn’t heard of before. Instead of egg and flour he used Greek yogurt! 🤯
So of course when Miss J came home I had the perfect opportunity to try this out as arancini balls were requested. It worked really well and I can say with confidence that I will be using this technique again 👏👏✅✅

After having this on my “to do list” for about 10 years I finally succeeded in making them (edible)

Rosemary and thyme polenta chips

I made these years ago, but didn’t leave them to set long enough so it was quite the disaster and they didn’t make it to the plate. I finally made them again last week and was quite impressed. I decided to oven bake them this time, but they weren’t quite crunchy enough, so I’d pan fry or air fry next time. Definitely worth giving them a go!

Berry and cream sponge "omelettes". So simple to make. It only made six, so for a larger family you'd have to do a couple of batches since one is definitely not enough!
The raspberries elevated the dish as always and thanks to Nikola for the extra gold bling.

I cooked the cover (crowd pleaser pierogi)! Great recipe and would feed an absolute crowd. Definitely worth the effort for your next family dinner.
Note to self - start the day before by making the quark. It needs to rest/drain overnight.
