Throwback to past accomplishments time!

Do yourself a favour whilst mangoes are still in season and make this luscious dessert. Mango Swiss roll from Cookidoo 🤤

It was a lot easier to make than I had imagined, rolling it was a breeze. I was quite pleased with myself at the time.

Another 35C day … another salad!

This one is another cracker … Jenny popped in for lunch today and I decided on Vietnamese style noodle salad from Cookidoo. I got fancy and added chicken to it, steamed the tenderloins, then shredded them for 4 seconds on reverse speed 4. I am not a fan of bean sprouts so left them out and I added fried shallots as an extra topping. Definitely going to add this recipe onto the rotation.

So we are in the weird zone of Christmas Day to New Year’s Day!

Here’s a bit of a rundown of what’s been happening around here:

We had our “Christmas Day dinner” on the 20th. As always we over catered! 😂🤷‍♀️. It was a lovely evening and I only got overwhelmed once-ish! I buggered up the paper instructions for the carrot and quinoa bake and it took three goes to cook the quinoa 🤦‍♀️🤦‍♀️…. Then I didn’t read/follow the steamed greens recipe and just winged the cooking time … and overcooked them a touch 🤦‍♀️🤦‍♀️. Everything else was perfect 👌

On Christmas Day Anne Maree and I did a 1,000 piece jigsaw puzzle 🧩.

I’m now starting the process of taking down Christmas. I’m one of those weird people who has to have everything packed away before New Years Eve so I can start the year fresh 🤷‍♀️🤷‍♀️. I don’t know, it’s just a thing I do.

We’ve got family members working on Christmas Day this year so we are hosting our family event today.

On the menu:

Turkey roll (box instructions 😂)

Honey mustard orange glazed ham (Cookidoo)

Roast potatoes with rosemary and garlic (Cookidoo after peeling with blade cover/peeler)

Steamed greens with lemon feta (Cookidoo)

Parsnip and carrot quinoa gratin (tenina.com recipe)

Others are bringing nibbles, prawns, dessert, gravy, stuffing and bread rolls

In traditional Galt style no one will be allowed to leave until they roll out the door!

If you are going to eat it all in one go definitely mix it all together, but we decided to keep it separate so it’s not soggy for lunch tomorrow.

Hubby made a cracker of a dish tonight!

Another 35C day demanded a salad! Crispy rice chicken salad with satay sauce. I’ve been wanting to try this crispy rice dish for a while. He added red capsicum to use it up. This is a great dish to make when you’ve got people coming over, just make all the components separately then put it together when you’ve are ready to serve.

Spätzle in Germany

During our Egypt/Europe trip last Christmas we tried many and varied foods of course! This is Spätzle at a Christmas market in Berlin. It’s kind of like pasta or noodles but you add an extra egg which makes the batter thin enough to push through holes to make shapes. It was served piping hot with a cheese sauce and was super helpful in warming you up when it was -1C.

In the comparable Cookidoo recipe you push the batter through the holes in the Varoma!

Gift giving or bringing a plate at Christmas?

These Red and green Christmas shortbreads are the absolute best idea for every occasion.
The Cookidoo picture makes them look awesome, versus the “rustic” look of my picture 😂
Pluses:
1) super easy to make
2) you don’t need to dip in white chocolate (I don’t bother)
3) if you are taking them to an event they don’t need refrigeration on the way or fussing over when you get there
4) same if you are gifting them, no special packaging required, although note that they can/will be crumbly

Notes:
1) make sure you keep the dough cold. Even if you have to take the time to pop the dough or slices in the fridge to set them again - make the effort. The end result is far superior.
2) as in the plus side above - you don’t need to dip in chocolate if it’s not your thing
3) ensure you make enough for everyone … they are very moorish 🤤🤤
