Marry me turkey meatballs with rice 🍽️

High protein, family friendly, and genuinely delicious.

This one is on rotation in our house for good reason.

Ingredients (serves 4)

Meatballs
* 500g lean turkey mince
* ¼ cup breadcrumbs
* 1 egg
* 2 garlic cloves, minced
* Salt, pepper, Italian seasoning to taste

Marry Me Sauce
* 1 tbsp olive oil
* 3 garlic cloves, minced
* ½ cup sun-dried tomatoes, chopped
* 1 cup chicken stock
* ¾ cup light cream or coconut cream
* 1 tsp chilli flakes
* 1 tsp dried oregano
* Handful fresh basil
* Salt & pepper to taste

To serve
* 160g cooked white rice per serve
* Fresh parmesan (optional)

Method
1. Combine turkey mince, breadcrumbs, egg, garlic, and seasoning. Roll into evenly sized balls.
2. Heat a large pan over medium-high heat with a little olive oil. Sear meatballs for 3-4 minutes each side until golden. Set aside.
3. In the same pan, sauté garlic for 1 minute. Add sun-dried tomatoes and cook for another minute.
4. Pour in chicken stock and cream. Stir through chilli flakes and oregano. Simmer for 5 minutes until slightly thickened.
5. Return meatballs to the pan and simmer in the sauce for a further 8-10 minutes until cooked through.
6. Serve over rice and finish with fresh basil and parmesan if using.
