Prawn 🦐 & Asparagus Kebabs over Quinoa with Side Salad

Enjoy a relaxing grilled-at-home meal. Double or triple the recipe for a cook-out with family or friends.

Ingredients:

5 small black olives
1 tbsp light salad dressing
1 6-inch (15cm) raw carrot
1⁄2 medium tomato
2 cups lettuce
65g dry quinoa
230g prawns
1 1⁄2 tsp Olive Oil
1 tsp Lemon Juice
Salt and black pepper to taste
1⁄4 cup salsa
4 kebab skewers
4 green onions/scallions + 1 for salad
5 whole asparagus spears
Directions:

Preheat the grill.
Peel and clean raw prawns.
Slice asparagus and scallion spears into 2-inch pieces.
Arrange the prawns, asparagus, and scallions on 8 skewers. Brush with oil and drizzle with lemon juice. Sprinkle with salt and pepper.
Grill kebabs until the prawns are cooked (bright pink) and the asparagus are just tender.
Cook Quinoa according to package directions.
Make side salad of sliced tomato, green onion, black olives, and carrots tossed with lettuce and dressing.
Serve skewers and salsa over quinoa with side salad.

Can you beat that, fresh Australian prawns, iceberg lettuce and seafood sauce.

Thank you to my coast neighbour for spoiling me with some Bluefin Tuna over the weekend.
It is so yummy the taste it light and soft with a non-fishy taste.
This can also be eaten raw as the Japanese do. The main fish they gave is the Yellowfin Tuna, but I was lucky enough to have the Bluefin, a real delicacy.

1. Tummy issues (bloating, upset tummy, gas, digestion issues, loose bowel, reflux, heart burn)

2. Chronic stress (poor sleep, headaches, nausea, dizziness)

3. Mental health (brain fog, memory issues)

4. Skin issues (breakouts, dull/uneven skin tone, eczema)

5. Using Antibiotics/immune issues (unfortunately, prescription antibiotics whist great for killing infection - “may” also upset the good and bad bacteria balance in our gut.
