Previously a personal trainer and boxing coach in Melbourne, Luke was inspired to create PHJ by his mum, who sadly lost her battle with breast cancer in 2021. Luke and his mum spent years researching diet & lifestyle options that could help fight cancer. Green tea was one of the first focal points at the beginning of the journey. This ended up being the impetus for Luke's venture into matcha. Living in Japan has enabled Luke to establish partnerships with Japanese matcha experts. We use the Okumidori cultivar for our Organic Ceremonial Matcha. “Okumidori” translates to “deep green”—and you can see why!

This specific cultivar is late-budding, meaning it has more time to absorb nutrients from the soil, resulting in a sweeter, mellower flavor profile without the astringency found in lower grades.
