There has been a lot of research dedicated to the health benefits of chocolate - particularly dark chocolate. This is a recipe that gives you all those wonderful benefits such as support for brain function, hormones, gut health and a boost in important minerals such as magnesium and zinc. The maple syrup and coconut oil in this recipe will also give you added mineral and nutritional benefits. I invite you to get creative and incorporate some more plant foods into your diet by adding some optional extras as suggested below. Choose what makes your heart sing 💛

Ingredients:
- 100g cocoa butter
- 2 tablespoons coconut oil
- 3 tablespoons cacao powder
- 3 tablespoons maple syrup
- Pinch of sea salt

Creative Options to mix in with your chocolate 🍫

Grated orange rind, crushed dried raspberries, toasted and roughly chopped macadamia, Brazil or almond nuts, sultanas, goji berries, ground spices such as cardamon, cloves, cinnamon.

Melt cocoa butter and coconut oil over very low heat.

Turn off the heat and mix in remaining ingredients.

Pour into a small slice tin lined with baking paper and sprinkle with optional extras.

Change is hard, but it is worth it 🌱

I love this time of year, mainly because it is mostly warm and sunny, also because it is symbolic of a fresh start. Yet in saying that, in Australia we have also adopted the Chinese New Year which doesn’t start until February. You could look upon this with confusion, or you could look on the bright side, and see that we have many chances at a fresh new start. In fact this is the reality of life, no matter what time of year it is.

There is a lot of talk about the year of the snake and the shedding of what no longer serves us in these last few weeks of Chinese New Year. In my Shamanic practice training this concept is always there for us, no matter what time of year it is. When your soul is ready to make a transformation, you will experience all kinds of shedding and losses in your body, your psyche or your life. Life presents many of these challenges and it is easy to look upon them from a place of powerlessness. Yet if we can embrace them from a place of power and awareness, we find there is a gift wrapped in a problem.

Neurologically, change can be difficult and energetically expensive. In the process of change, our brain prunes away neurons that we aren’t using (because they are neurons involved with a certain behaviour we are no longer doing or story we are no longer engage in etc) Our brains are also strengthening new neural connections associated with the new behaviour, feeling, story etc that we are engaging.

So if you do feel challenged with a change in your life, know that this is not wrong. Our brains have an amazing ability to rewire, re-pattern and respond to our conscious choices in life. It may just take a consistent conscious effort, and a bit of extra time and energy to make the adjustment.

For this coming month, I wanted to cheer you on with whatever important changes or choices you are making for you and your loved ones. May every choice you make, and every step you take, come from the heart. I am here in my kinesiology and KaHuna practice to support you if needed.

Valentine’s Love-your-veggies weekend 💚

Not everyone is lucky enough to have a beloved valentine with them for Valentine’s Day, but it doesn’t mean you can’t invigorate your love life. This Valentine weekend I am bringing back the theme of introducing 30 plus plant foods for your week. Pour your love into yourself and your veggies with the recipes I have for you.

There is a high scoring 14 plants in this curry and you will be adding an extra 2 when serving with rice and toasted cashew nuts.

Super Green Vegetable Curry 🫛🥦
(serves 4)
1/2 cup coconut oil
4 cloves garlic
1 cup fresh basil leaves
5cm ginger chopped finely
1 fresh chilli
1 bunch fresh coriander (use half in the paste and reserve some for garnish)
200g greens (eg. spinach/silverbeet)
600g Lebanese eggplant cut into 1.5cm slices
1 small tin coconut cream
2 cups vegetable stock
150g green beans
1 cup frozen peas
Broccoli and cauliflower cut into small florets
Juice of 1 lemon

Process half the oil, garlic, ginger, chilli, coriander and half the greens until a smooth paste forms.
Reserve 1/4 cup of paste.
Heat remaining oil and cook eggplant until soft and golden.
Reduce heat and add paste, coconut milk, stock. Stir in remaining vegetables and paste. Cook for 3 minutes or until vegetables are just tender.
Season with salt and lemon juice.

Top with toasted cashew nuts and fresh coriander and serve with rice.
You can add shallow fried firm tofu to this dish to add an extra plant to your dish.

Valentine’s Love-your-veggies weekend 💚

Not everyone is lucky enough to have a beloved valentine with them for Valentine’s Day, but it doesn’t mean you can’t invigorate your love life. This Valentine weekend I am bringing back the theme of introducing 30 plus plant foods for your week. Pour your love into yourself and your veggies with the recipes I have for you.

Carrot and Kale salad (serves 4) 🥕🥬
This is a great salad to spoon into a wrap, have with your main meal, or just as it is. If you don’t like kale, you can replace it with rocket or any lettuce leaf. I am not a huge fan of kale but when the dressing and other ingredients in this salad makes it bearable.

Salad Ingredients

Finely chopped:
1/2 Kale bunch
4 carrots
2 sticks of celery
1 cup of desiccated coconut

Dressing Ingredients:
1/2 cup MCT coconut oil
1 tablespoon tamari
2 tablespoons apple cider vinegar
1 teaspoon honey

Mix the salad ingredients together. Shake the dressing ingredients in a jar and pour over the salad mixing through. Toast 1/2 a cup of Walnuts or almonds and sprinkle on top

This Valentine weekend I am bringing back the theme of introducing 30 plus plant foods for your week. Pour your love into yourself and your veggies with the recipes I have for you.

Party Lentil Beetroot dip:
This recipe was a hit at a women’s gathering I catered for. It looks great and is packed with 5 different plant foods that you may not normally have in your diet. Use it as a dressing on your salad or veggies or dip your crackers or bread.

2 small - medium red beets
1 cup of cooked lentils
1⁄4 cup tahini
1 tablespoon extra virgin olive oil
1 tablespoon of apple cider vinegar
Pinch of Sea salt

Preparation:
Boil beetroots until tender and remove skin
Blend all ingredients in a food processor

I created this delicious recipe that I thought would be perfect for Valentines day ❤️ It is a decadently luscious creation with chocolate. It is a plant packed slice with a great amount of fibre and healthy fat.

Raw Chocolate Hazelnut slice:
1/2 cup hazelnuts
3 avocados
6 heaped teaspoons of raw cocao powder
100g dark chocolate
1/2 cup of coconut oil
1/4 cup of honey
1 dessert spoon of vanilla essence

Method:
Melt chocolate and coconut oil in a bowl over a saucepan of boiling water.
Blend hazelnuts to make hazelnut meal (make it as rough or as fine as you choose)
Add the avocados, honey, vanilla, cacao powder, melted chocolate and coconut, and blend until smooth.
Pour into a loaf tin lined with baking paper and set in the refrigerator for 1 hour.
Cut into squares and serve.

You can serve it with fresh berries for extra plant goodness.

Happy gut, happy body, 30 plus plant challenge

Another hot tip for increasing the amount of plant foods in your week to boost your gut health. Add herbs at every meal.

I have fresh herbs on my deck where we have our meals. This is a good prompt for me to throw some extra plant material onto the plate.

Here are my hot tips for incorporating herbs into your meal routines:

Garnish your fruit salad with mint
Garnish your salad with a sprig of thyme
Finely chop rosemary and add to your salad
Garnish your rice dishes with fresh coriander
Throw some parsley into your sandwich or on your toast
Cook your beef or lamb steaks with oregano and rosemary
Add some fresh tarragon to your fish dish
Throw some chopped chives onto your chicken or into your burgers
Add sage leaves to your roast veggies

Michael and Simone gave birth to Soul Nurturing in the enchanted forests and fields of the south west of WA. They have overcome adversities and personal limitations, and in turn have forged the strength and vision to support others to do the same. They are accredited practitioners with each of their modalities, and act with the highest integrity in all that they do. Having experienced the benefits of a loving working relationship together, It has become our passion to guide people to build healthy relationships with themselves and others. With over 35 years of soul nurturing experience between us, we are delighted to tailor any of our services to meet your needs and provide a memorable and soulful healing experience.
