Check out my online dietetics private practice, focusing on nutrition in relation to gut health and mood. This includes IBS, IBD, functional gut disorders (+ general gut health), stress and conditions such as anxiety, depression, OCD, ADHD and sleep disorders.

Did you know there is evidence that nutrition therapy can assist with reduction of symptoms of these disorders? Mental health is such an important issue to address and nutrition is one piece of the puzzle that not a lot of people know about! 🧩

Hey, I’m Courtney! 👋✨

I thought I would reintroduce myself since it’s been a little while!

🤍 I’m an accredited practising dietitian and founder of Courtney Ellis Nutrition. I offer dietetics consults because helping people achieve their nutrition and health goals is a passion of mine.

🌏 I offer online consults (meaning I can see anyone in the world!) but will be looking to get a space in Brisbane AUS to offer face to face sessions in the future.

✨My areas of interest are gut health and women’s health nutrition. I come from a background of social work so I bring my trauma-informed care into my dietetics sessions to provide you with the most supportive and safe environment I can.

🌊 When I’m not working, you can find me having matcha at a cute cafe with my partner (I also love coffee), out for a walk in nature or at the beach (soaking up the sun as much as I can).

✨Inclusion over exclusion✨

One thing I am very vocal about is inclusion rather than exclusion when it comes to food and our diet.

What does this mean?
Focusing on including whole foods such as vegetables, fruit, legumes, grains, nuts and seeds rather than eliminating processed, sugary foods. The mentality of excluding foods often makes you want them more. By including whole foods, these have fibre (and other amazing nutrients) that help keep us fuller. Meaning if you are including more of these foods in your diet, you are less likely to snack and eat the processed foods you are trying to reduce.

This is the reason why ‘diets’ are unlikely to be sustainable for long periods (often even shorter term) because they are based on excluding foods.

So inclusion over exclusion is likely to make a more sustainable diet and relationship with food that is rich in all the nutrients we need for optimal health. It’s all about balance, and including whole foods where possible and also having other food we love to eat.

✨How to reach your 30 plant points for gut health✨

Coming into Christmas, there are ways that you can support your gut through simple swaps to increase your plant points!

What are plant points?
Our guts thrive off plant foods and the purpose of plant points is to have an easy way to keep track of and increase gut loving food! Each different food in the below categories counts as a plant point.

This includes:
✨fruit
✨vegetables
✨whole grains
✨beans and legumes
✨herbs and spices (yes these count)
✨nuts and seeds

We should be aiming for around 30 plant foods a week, which is around 4-5 a day. Swapping spinach for a 4-5 mixed leaf salad means you are getting 5 plant points from the different salad greens, instead of just one from spinach.

Making a Christmas dish with different varieties of plant foods is going to give our guts some diversity for our good gut bacteria. Diversity in plant foods is key for gut health so our good bacteria thrive over the not so good bacteria. So add some nuts to your Christmas salads, plenty of fruits in your desserts or using mixed greens for the base of salads are great hacks for doing this.

✨Lamb rice bowls✨

It’s the perfect weather for rice bowls at the moment ☀️🔥 (I swear there is rice underneath the salad)

This lamb rice bowl is using marinated lamb steaks sliced up. 9mins in the air fryer and they’re perfect 😍 Lamb is a great source of iron and can be part of a healthy balanced diet once or twice a week. The Heart Foundation recommends limiting red meats to 1-3 times a week and including other protein sources such as fish, legumes, nuts and seeds, as well as lean poultry and eggs.

Salads are so fresh and just what I needed on a hot day. I’ve got carrot, cabbage, cucumber, spinach, corn with olive oil as a dressing to get in those healthy fats. You can go wild with your favourite salad and veg on this meal 🥬🥑🥒🍅🥕🫑

This week is graduation week and soon I will officially be an accredited practising dietitian 🤩 exciting things to come.

✨Pork stir fry✨

I am back with a working cooktop after 3 months 😅🤩 So to celebrate, have a stir fry recipe!

This one is super easy and you can add in whatever extra veg you like. Stir fry is such a great meal to allow you to add in more vegetables to hit your 5 a day. Swipe to see serve sizing for a serving of vegetables from the Australian Guide to Healthy Eating! Getting in enough veg is so important for our health and they’re packed with nutrients and fibre.

You’ll need:
- 500g lean pork mince
- 1 packet of noodles
- 1 bunch of broccolini, cut into small stems (add more of the stems for less waste)
- 4-5 large mushrooms, cut
- 2 large handfuls of super greens stir fry mix (this is from Woolies)
- Passage to India hoisin and garlic stir fry sauce (or make your own- this one is great if you’re time poor or love something quick on a weeknight)
- 2 cloves of garlic (I can’t get enough garlic)
- 2 tsp of minced ginger

How:
1. Heat wok to medium-high heat and add olive oil.
2. Add the pork and separate and cook until browned. Add garlic and ginger.
3. Add the broccolini and mushrooms and mix with the pork until they are softening.
4. While the vege are cooking, cook your noodles according to the packet.
5. Add in your greens and mix well.
6. Pour in your sauce and coat all the pork and vegetables.
7. Add noodles, mix and serve!

It’s that easy ✨

BENEFITS
Breakfast is such an important meal for fuelling our brain and body and reaching all of our required nutrients for the day. It can help with improved appetite control and focus.
Starting your day with a balanced breakfast, can also reduce your blood sugar going on a rollercoaster throughout the day. 📈

Elements of a balanced breakfast include 2 or more of the following: 🍽️

1. Protein: these include foods such as yogurt, eggs, nuts, seeds and legumes. Protein helps keep us feeling fuller for longer and these foods provide a variety of nutrients such as calcium, vitamin B12, selenium to name a few.
2. Complex carbohydrates: these include foods such as fruit, vegetables and whole grains. These foods provide fibre and help keep us fuller for longer while also helping our blood sugar levels.
3. Healthy fats: these include foods such as avocado, nut butters, nuts, seeds and olive oil. Fats also help keep us fuller for longer, helps with cell growth and cholesterol levels.

Exciting things coming soon! I’ve been working on opening my own online private practice nutrition business. I’ll post closer to when books open for online consults. With Brisbane based in-person consults hopefully coming later next year!

If you are seeking personalised nutrition advice and are looking to work towards your health goals, Courtney Ellis Nutrition is for you. Creating a safe space for you to discuss your health goals and working together to create nutrition strategies that are sustainable and work for you is SO important to me. After a whole year of placement working with clients to support their health through nutrition and working with women in a social work setting in my past career, I could not be happier to announce this new venture.

Holistic nutrition is very important to me because there are many things that impact our health. Holistic nutrition considers you as a person and acknowledges the many aspects of your life that can affect your health goals and symptoms.

Keep an eye out for updates in the New Year and the launch of the website 🤍✨
